Hallmark!
Today is my birthday !
Happy Birthday ♥ ¸¸.•*¨*•♫♪ Happy Birthday¸¸.•*¨*•♫♪ Happy Birthday to me♥ ♥ ♥
Today is also International Women’s Day which was first celebrated in 1911. More than one million people in Austria, Denmark, Germany and Switzerland attended rallies and events to campaign for women’s rights and to end gender discrimination.
Today Women’s Day gives us an opportunity to recognize all of the economic, political, and social achievements women have accomplished throughout history. In the fifteen countries where it is an official holiday, it is similar to Mother’s Day. People honor their mothers, wives, friends and colleagues with flowers and small gifts.
To celebrate today, show your support in your community.
If you cannot see the bright side, polish the dull side
THOUGHT FOR TODAY
No one can make your feel inferior without your consent.
Eleanor Roosevelt
I’m happy to say I’m a woman and I love everything about being a woman. I’m a mother, a widowed wife, and a grandma. I like people who treat me as a woman, people that open doors for me or let me go ahead of them because of who I am. The only thing is that men do make more money than woman do even if they are doing the same jobs. So in that we are still not equal.
It’s hard to believe that one time we weren’t allowed to vote, but now we can and many still don’t. I do but not everyone does. It’s and honor and privilege that some still don’t have.
I haven’t planned much to do today in order to celebrate, except to start or restart a blog I used to do called The Next 20 Years. I did this a while back, but on my 79th birthday, I thought it would be fun to do it again. I have no idea if I’ll live for 20 more years to the ripe old age of 99 or not. But for now I’m still going and we’ll see in time how long I last. To my amazement, I keep on waking up to a new day. If for some reason I don’t post some day, you’ll know I’m no longer here or that my internet stopped working. That has happened before and may again. I don’t have much control over either of them.
So what did I get for my birthday gift? My family usually goes together to get me something and this year is no different. My old rocking chair is worn out. Matter of fact the seat is falling down. A spring in it let loose and I’ve had to place a pillow on it or order to use it. So they, probably my DD, will be taking me shopping for a new chair. I have to try them out before buying to make sure it’s a good fit.
My family all celebrated last week on Saturday when they took me out to dinner, so today will probably be a quiet day. The only thing I have planned is grocery shopping and I have made a new menu to do that from:
My menu for next week is:
Monday - Classic Cobb Salad
Wednesday - Asparagus Ham Dinner
Friday - Baked Fritata with Butternut Squash, Kale and Sage
Weekend - Rosemary Chicken with Sweet Potatoes
On the menu for today is:
Spicy Orange Beef and Boccoli Stir Fry
Makes 6 servings
3 oranges
3 Tbsp. reduced sodium soy sauce
1 Tbsp wine or dry sherry
1Tbsp. cornstarch
3 tsp. canola oil, divided
1 lb. beef sirloin trimmed and sliced against the grain into 1/8 inch slices
2 Tbsp. minced garlic
2 Tbsp. fresh ginger
6 small dried red chilies, optional
2 lbs. broccoli, cut into small florets, 6 cups
1/3 cup water
1 red bell pepper, seeded and sliced
1/2 cup sliced scallion greens
With a sharp knife cut wide strips of zest from one of the oranges. Cut zest into 1 inch strips and set aside. Sqeeze juice from all the oranges into a small bowl. Add soy sauce, wine or sherry, and cornstarch and stir to combine. set aside
Heat 1 tsp oil in a wok or large skillet over high heat until almost smoking. Add beef and stir fry until no longer pink. Transfer to a plate lined with paper towel and set aside
Add remaining 2 tsp. oil to the pan and heat until hot. Add garlic, chilies and reserved orange zest, stir fry until fragrant. Add broccoli and water. Cover and steam, stirring occasionally until the water has evaporated and the broccoli sizzles. Add bell pepper and stir fry 1 more minute.
Stir the reserved orange sauce and pour in the wok. Bring to a boil, stirring, and cook until sauce is slightly thickened. Add scallion greens and reserved beef and toss to coat with sauce; heat through.
I won’t be using the chiles that would be to spicey for me. I like my food mild.
Remember today, to celebrate everyday like it is your birthday !
I hope you all have a WONDERFUL Wednesday!
