Today is the Spring Equinox, the official first day of Spring. Get ready to pack away the winter clothes, because soon enough we will be enjoying warmer weather and much longer days and the arrival of flora and fauna.
The word equinox means equal night, referring to the fact that the days are approximately equal everywhere, and the sun rises and sets due east and west. According to popular folklore, you can stand a raw egg on its end during the equinox. No one has statistically proven this to be true or false, try for yourself and see what happens.
The Spring Equinox brings sure signs of changing seasons, from blooming flowers to chirping birds. It marks the beginning of natures renewal in the Northern Hemisphere.
Celebrate today and wish everyone you know a Happy first day of Spring.

Happy Spring every one! This is a day I’ve been waiting for a long time. I’m so looking forward to the renewal of our earth and can hardly wait until I see green grass and leaves on the trees again!
After a cold wintry weekend, we are to feel like Spring today with temps close to the 50’s. I’m so happy and thankful for warmer weather. It’ll probably be a while yet before it stays this way, but for today we’ll be thankful for warmer weather. We’ll, no doubt, still need a jacket today, but a lighter one than my heavy winter coat.
Today I’ll be cooking up something new for dinner and on the menu is :
Slow Cooker Chicken and White Bean Stew
Makes 6 servings
1 lb. white beans, soaked overnight and drained.
6 cups chicken broth
1 cup chopped onion
1 cup sliced carrots
1 tsp.finely chopped rosemary
2/3 cup grated Parmesan, divided
2 bone in chicken breasts
4 cups chopped kale
1 tbsp lemon juice
1/2 tsp ground pepper
2 Tbsp. olive oil.
1/4 cup parsley leaves
I didn’t soak beans over night so I’m using 4 cans, drained and rinsed, of great northern beans.
Combine beans, broth, onions, carrots, rosemary and Parmesan in a slow cooker. Top with chicken and cover and cook on low until beans and vegetables are tender. About 8 hours
Transfer the chicken to a clean cutting board; let stand until cool enough to handle. Shred the chicken, discarding bones.
Return the chicken to slow cooker and stir in kale. Cover and cook on High until Kale is tender, about 30 minutes.
Stir in lemon juice and pepper. Serve the stew drizzled with oil and sprinkled with Parmesan and parsley.
I’m going to enjoy this sunny day by trying to clean up the cobwebs in my house . You can really see them when the sun is shinning.

Celebrate and welcome Spring today !
I thought it was tomorrow, 3/21. I live in Riverside county, CA. We have been having big storms over here, rain at our altitude and a punishing amount of snow up in the Big bear area. I am glad to see green.
I'm so happy you're finally getting to enjoy signs of warmth, Ma! We've been below freezing the last few days, but they said 'get ready!' for a big warm-up.
Yes, I tried that egg experiment last year. It didn't stand on its end, but the pups enjoyed cleaning up the mess!
Good day spring it was 29 degrees this morning. Brrr. So you are in Ohio? My son is in Cincinnati. I wonder if you are there.
