Today is the Beginning of Meteorological Spring which begins March 1st. The meteorological seasons are divided according to calendar months. Spring months are March, April and May.
Spring is one of the four conventional temperate seasons following winter and preceding summer. Spring is seen as a time of renewal and new life. The term is also used as a metaphor for the start of better times, as in the Prague Spring.
Unstable weather may occur during spring, when warm air begins on occasions to invade from lower latitudes, while cold air is still pushing on occasions from the Polar regions.
To celebrate today, simply think spring !

We’ve had unstable weather for awhile now. I call it roller coaster weather. One day warm followed by a cold day only to warm up again. Today is one of the warmer ones with temps to be close to 60 degrees. Yesterday we were in the 30’s.
It’s my day to get out for groceries and I’ve made up a new menu for next week:
Monday - Slow Cooker Cabbage Roll Soup
Wednesday - Spicy Orange Beef and Boccoli Stir Fry
Friday - Smoky Shrimp, Corn and Pea One Pot Pasta
Weekend - Garden Chicken Cacciatore
On the menu for today is:
Mexican Inspired Beef and Corn Skillet Peppers
Makes 4 servings
Nonstick cooking spray
12 oz. lean ground beef
2 cups corn kernels
1, 10 oz, can diced tomatoes and green chilles such as Rotel, mild
1 1/2 tsp ground cumin
2 large green sweet peppers, halved lengthwise, stems, seeds and membranes discarded
1 oz finely shredded sharp cheddar cheese
Lightly coat a deep nonstick skillet with cooking spray and place over medium high heat until hot. Brown beef, stirring frequently. Stir in corn, tomatoes, and cumin. Top with pepper halves, cut side down. Bring to a boil over medium high heat, reduce heat, cover and simmer 20 minutes or peppers reach desired tenderness.
Remove from heat. Place peppers on a serving platter. Spoon in meat mixture and top with cheese.
Serving size is one half pepper and 1 cup of meat mixture.
Although Spring is officially a few weeks away, it will really feel like Spring outside today.

Aw, your bunny at the top is probably my favorite of all you made. So many good labels for March, aren't there? My personal favorite is 'Optimism Month.'
I hear you about the roller-coaster weather! As long as there's no tornado warnings I'm good.
I'm looking forward to reading about your slow cooker cabbage roll recipe; I might just make that to take to my son and DIL's house this weekend. Something easy they can just plug in and not worry while the estate sale is going on.
I am thinking and feeling spring here and so do the trees. I sure hope it doesn't get real cold again for both our sakes.
We have had an odd winter too - we always have had sun - but not this year - gloomy and wet.
March holds a lot of things to look forward to.

And I am ready for it this year. Life is slower than usual for us now and I can get used to this. No big plans for entertaining other than a music dinner party sometime in April.
I'm even looking forward to getting out and digging in the gardens!
