Today is National Spinach Day which celebrates an incredibly healthy leafy green vegetable.
Not only are there so many delicious ways you can enjoy spinach, it is very good for you!
Spinach grows natively in central and southwestern Asia. Thought to have originated in ancient Persia. Arab traders carried spinach into India and later introduced it into ancient China. There it was known as Persian vegetable. The earliest record of the spinach plant was found in a Chinese document. It noted that the spinach plant was introduce into China via Nepal.
During her reign as queen of France, Catherine de Medici enjoyed spinach so much that she ate it at every meal.
Today dishes made with spinach are known a Florentine, reflecting Catherine’s birth in Florence.
It can be eaten fresh, frozen or canned, cooked or raw. And is one of the best sources of iron, calcium, folic acid, fiber, protein, and vitamins A, C, and K.
It’s loaded with cancer fighting antioxidants and believed to help cardiovascular and gastrointestinal health. Following China, the United States produces the second largest spinach crop. California, Arizona and New Jersey are the top spinach producing states.
To celebrate today, shake up your vegetable routine and mix up your own greens. Enjoy a spinach salad, spinach pizza, spinach dip, cream spinach, and Spinach lasagna or add it to your eggs.

I love spinach and have it often mixed with other foods. I even love it on a sandwich instead of lettuce.
Today I’ll be having some in a salad to go with my left overs. It’s so good and good for us too! As promised today is a much quieter day and the winds have calmed down. The rain is gone and it’s to be a mostly sunny day in the 50’s .
Still I’m staying in today and relaxing. The week ahead is going to be a busy one. I need all the rest I can get. I’m not going to do a whole lot exciting but it will be busy with the daily upkeep here.
Thankfully there was no damage here from the high winds, but some places had toppled trees and loss of electricity. I think just listening to all that wind wore me out.

It’s better to get the nutrient for healthy skin from food, not supplements. Salmon, walnuts, blue berries, spinach … lots of my favorite foods happen to be amazing for the skin too.
