Today is Poultry Day which is when we celebrate chicken, turkey and other birds we commonly consume. Poultry is a category of domesticated birds kept by humans for the purpose of collecting their eggs, or killing for their meat and or feathers. Poultry is the second most widely eaten meat, after pork.
Chicken meat contains two to three times as much polyunsaturated fat as most types of red meat when measured by weight. A serving of baked chicken contains 4 grams of fat and 31 grams of protein, compared to 10 grans of fat and 27grams of protein for the same portion of broiled lean skirt steak.
To celebrate today enjoy some poultry: turkey, chicken or other domesticated bird for dinner tonight.

I do eat more chicken than I do another kind of meat. And I have eggs for breakfast often. For some reason I usually don’t have much turkey until Thanksgiving time. I really should have it more often. However, I do have it on my sandwiches as I can buy slices at the grocery store.
My grandmother sold eggs from her chickens for pin money. She saved them in cartons and then sold them to stores. The mailman would pick them up and deliver them. As I a child I helped to collect the eggs. Her chicken house was quite large and was on the edge of her garden. When the chicken house was cleaned out it, it made good fertilizer for the garden.
I forgot to share my recipe for today on yesterdays post. My dinner for the weekend is:
Rosemary Chicken with Sweet Potatoes
Makes 4 servings
4 tsp. olive oil
3 cloves garlic, minced
1/2 tsp snipped fresh rosemary
1/2 tsp freshly ground black pepper
1 20 oz package refrigerated diced sweet potatoes
2 skinless, boneless chicken breast halves, halved crosswise
1 lemon, thinly sliced
In a nonstick skillet heat 3 tsp. of the oil over medium heat. Stir in garlic, 1/4 tsp. of the rosemary and 1/4 tsp of the pepper. Add potatoes and toss to coat. Cook covered, 5 minutes
Push potatoes to one side of skillet. Add the remaining tsp of oil to the other side. Arrange chicken in the skillet along side potatoes. Cook covered 8 minutes.
Stir potatoes and turn chicken. Sprinkle chicken with remaining rosemary and pepper. Top with lemon slices. Cover and cook 10 minutes or more until chicken is done and potatoes are brown.
If desired sprinkle with additional rosemary. Apples fried in a small amount of oil, and spices would be a good side dish to have with this meal.
We have a chance of snow today so I’m staying inside again and keeping warm. I’ll be streaming church services on line once again.
I’ve been reading a series of books by Marie Force. It’s easy reading with happy ever after endings. The books are about a family of brothers and a sister who meet the love of their lives. I do love a good romance story.
And in case you didn’t already know it, the Bible tells the greatest love story of all time.

A roast Chicken is a favorite of mine to have for Sunday Dinner! Enjoy some poultry today !
I remember happy times spent gathering eggs with my grandmother on her farm. They were still warm! I normally have 1-2 eggs every day with pork sausage or 'loose meat.' Today, however, because we're getting ready to leave town for a few days, we may just opt for a rotisserie chicken.

Yes like everyone else, I certainly eat a lot of chicken. As they say before they are born and after. LOL
