Today is Johnny Appleseed Day which celebrates the introduction of apple trees to many parts of the United States
John Chapman, known as Johnny Appleseed was an American nurseryman traveling west. Throughout his journey he planted apple seeds, creating apple trees in many states such as Pennsyvania, Ohio, Illinois and West Virginia. He is also known for his generosity, love for animals and religion and his preaching.
This national holiday is celebrated on March 11th, which marks the approximate date of his death. It is also celebrated on September 26th as well, to commemorate his birthday.
Celebrate today by enjoying an apple, a carmel apple, applesauce or apple cider. Bake an apple crisp or apple pie and enjoy!

Today also would have been the birthday of DDH. He would have been 81 years old today, but due to his death in 1992, he only lived to be 50. He is truly missed by all of us, but will be remembered as we keep in our hearts where he is always close by.
I do love apples and they are something I can enjoy. Apples are very healthy and good for you. The old saying, an apple a day keeps the doctor away is very true.
Apples may lower your risk of cancer, diabetes and heart disease. Research says apples may also help with weight loss, while improving your gut and brain health. So why not have an apple to eat every day.
They say it’s best to eat them with the skin on, don’t peel them. The skin is very nutritious too.
Saturdays are the day I cook for the weekend and on the menu is:
Garden Chicken Cacciatore
Makes 12 servings
12 bonesless, skinless chicken thighs
2 medium green peppers, chopped
1 can diced tomatoes with basil, oregano, and garlic, undrained
1 can, 6 oz., tomato paste
1 onion chopped
1/2 cup reduced sodium chicken broth
1/4 cup dry red wine, or additional chicken broth
3 cloves garlic, minced
1/8 tsp pepper
2 Tbsp. cornstarch
2 Tbsp. cold water
Minced fresh parsley, optional
Place chicken in a slow cooker. In a medium bowl, combine green peppers, tomatoes, tomato paste, onion, broth, garlic, and pepper; pour over chicken. Cook covered on low 8 hours or until chicken is tender.
In a small bowl, mix cornstarch and water until smooth; gradually stir into slow cooker. Cook covered on high for 30 minutes until sauce is thickened. If desired, sprinkle with parsley before serving.
I only had chicken breasts on hand so that is what I used. Otherwise I followed the recipe as is. I did cut the breasts in half but only made half this recipe as it makes so much. I will still have plenty leftover to have on Sunday.
It’s to be cloudy day with only a slight chance of snow. Tomorrow we may get some more snow. We can only wait and see.

Happy Heavenly Birthday to your DDH! Tom turned 81 a couple of weeks ago, but sadly he's struggling.
Closest we'll probably come to observing Johnny Appleseed day is a bit of AJ in the refrigerator. It was always a fun day back in the time of Girl Scouts.
