Hallmark!
Today is the Old New Years Day which was changed in 1582 when the Gregorian calendar was created. Many countries choose to ignore it for several hundred years. Instead they used The Annunciation Style dating which recognized the Feast of the Annunciation, March 25th, as New Year’s Day.
While many now have chosen to observe the New, New Year, many Eastern Orthodox families still celebrate the Old New Year with a nostalgic traditional family meal with music and drinking.
To celebrate today, plan a lovely dinner at home. Happy Old New Year!
If you cannot see the bright side, polish the dull side
THOUGHT FOR TODAY
Write it on your heart that every day is the best day in the year.
Ralph Waldo Emerson
I celebrated the New New Year’s Day on January 1st, as most of us did. But today might be a great time to check up on those New Resolutions we made. I’m still working on mine, I try to do better every day than the day before. I’m definitely a work in progress!
It’s my day to cook something new here and on the menu is
Easy Salmon Cakes
Makes 4 servings
3 tsp olive oil, divided
1 onion, finely chopped
1 stalk celery, finely diced
2 Tbsp. chopped fresh parsley
15 oz. canned salmon drained
1 egg slightly beaten
1 1/2 tsp. Dijon mustard
1 3/4 cup breadcrumbs
1/2 tsp freshly ground pepper
Creamy Dill Sauce, see associated recipe
1 lemon, cut into wedges
Preheat oven to 450 degrees. Coat a baking sheet with cooking spray.
Heat 1 1/2 teaspoons oil in a nonstick skillet over medium high heat. Add onion and celery; cook stirring until softened. Stir in parsley; remove from heat.
Place salmon in a medium bowl, Flake apart with fork, remove any bones or skin. Add egg and mustard; mix well. Add onion mixture, breadcrumbs and pepper; mix well. Shape into 8 patties about 2 1/2 inches wide.
Heat remaining oil in the pan over medium heat. Add 4 patties and cook until the undersides are golden. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with remaining patties.
Bake the salmon cakes until golden on top and heated through, about 20 minutes. Meanwhile make the Dill Sauce. Serve the salmon cakes with sauce and lemon wedges.
To make the the Dill Sauce:
Makes 8 servings
1/2 cup mayonaise
1/4 cup plain yogurt
2 scallions, thinly sliced
1 Tbsp. lemon juice
1 Tbsp. finely chopped dill or parsley
Freshly ground pepper to taste
Combine mayonaise, yogurt, scallions, lemon juice, dill or parsley and pepper in a small bowl. Mix well.
Make ahead up to 2 days and store in refrigerator.
Serving size is 1 Tablespoon.
After a few warmer rainy days, we are getting cold today with temps back in the upper 30’s, but it will warm up again in the 60’s tomorrow. This roller coaster weather continues.
I hope you all have a FANTASTIC Friday!
Cheers to a new year and another chance for us to get it right.

PRAYER FOR OUR TROOPS
Please pray for God's protection of
our troops and HIS wisdom for their

Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.

We ask this through Christ our Lord.
