Today is Chop Suey Day which is a dish that is now a staple on many Chinese restaurant menus across the country. But no one really knows where this Chinese- Anerican dish originated from. Some say that Chinese immigrants created the dish after arriving in America, while others insist it is traditional Chinese.
Chop Suey is a dish made with a hodgepodge of ingredients like egg, meat and vegetables. In fact the name chop suey comes from a cantonese word meaning odds and ends. The dish is traditionally served with rice or noodles to soak up all the delicious flavors.

Chop Suey: The Chinese American version of a leftover casserole.
For Years the only Chinese food I had came from a can. We’d serve it over rice noodles along with a side of white rice with cinnamon, sugar and butter. Chinese restaurants were rare and we didn’t frequent them even when they could be found. Every meal used to be made at home. Eating out was only for very special occasions. Just like the only pizza we had came out of a box that we made ourselves.
This dish wasn’t really chop suey at all. but was chicken chou mein. Chop suey became my nickname for this chinese dish. I still keep some in the cupboard for when I need a tatse of Chinese but it’s not the healthiest thing as it contains a lot of salt.
On the menu for today is a dish I’ll be making to enjoy all weekend.
Pineapple BBQ Chicken in Foil Packs
4 skinless boneless chicken breasts
2 c. pineapple chunks
1 red bell pepper, diced
salt and pepper to taste
for the sauce
1/2 cup barbecue sauce, your choice
3 cloves garlic, minced
1 tsp paprika
2 tbsp olive oil
1 Jalapeno sliced, optional
2 tbsp. fresh lemon
1 tsp. oregano
Chopped cilantro to taste
Preheat oven to 350 degrees, Lay four 12 by 12 squares of foil out on work surface. Place pineapple chunks, and bell peppers in the middle of each piece of foil. Season with salt and pepper, then top each with a chicken breast. Season to taste.
In a bowl, combine bbq sauce, olive oil , paprika and minced garlic, lemon juice, oregano, and jalopeno,,if desired. Divide the sauce over each chicken breast. and sprinkle with chopped cilantro..
Fold the foil over the chicken and vegetables to close off the pack. Seal the ends together so the pack stays closed.
Transfer packs to a baking sheet and bake for 25 minutes or until the chicken is cooked through and veggies are tender. When chicken is done, carefully open the foil packs, drizzle with more sauce and broil for one to two minuets to crisp up the chicken.
Serve immediately, garnished with more cilantro. Enjoy!
I’ll be having mine with a baked potato and a side of cole slaw.
I’ll also be making macaroni salad today which would also be a good side dish to have with the chicken, but it’s actually for a party I’m going to tomorrow to celebrate Mr. Wonderful’s birthday. His actual birthday is the 31st, so I’ll be showing party pictures then.
Today is also a celebration of DS#1’s birthday. It’s one I could never forget. I don’t think any mother ever forgets the birth of their first child. He was very wanted and very loved. We named him Matthew because that name means a gift from God. And that he was to all him who knew him. He never had anything but friends as far as I know, everyone loved him.
So I'll be lighting a candle in his honor today and remember all the happy times we had together.
