Today is National Cherries Jubilee Day which is a day to celebrate one of the standard items at American’s finest restaurants of a long gone era.
Cherries Jubilee is a classic flambe’ dessert made with cherries and liqueur, typically birch or brandy, served over vanilla Ice cram. The orginal recipe was attributed to French chef Auguste Escofffie who prepared the dish for one of Queen Victoria's jubilee celebrations. It is unclear if it first appeared at the Golden Jubilee in 1886 or the Diamond Jubilee in 1897, but it quickly became one of the most fashionable desserts of time.
If you’re looking for a dessert for a dinner party, even if it’s not today, try making this vintage dish to impress your guests.
If you can’t see the bright side, polish the dull side .

Everything burns…you juts gotta know what kind of fire to set.

I do love cherries and ice cream but have never had this dessert before, but it would be impressive when you set the cherries to flame. Here’s a recipe just incase you might like to make your own.
Classic Cheries Jubilee
Makes 4 servings
1 c. white sugar
2 tbsp. cornstarch
1/4 c. cold water
1/4 c. Orange juice
1 lb. bing or other dark sweet cherries, rinsed and pitted
1/2 tsp finely grated orange zest.
1/4 tep cherry extract
1/4 c. brandy
3 c. vanilla bean ice cream
Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice, bring to boil of medium high heat, whisiking until thickened. Stir in the cherries and the orange zest. return to a boil then reduce heat and simmer 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
Remove cherries from the heat and stir in cherry extract. Pour in the brandy and ignite with a lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.
The flames can get quite high when lit, so pay attention to anything flammable above and around where you are. The goal is to have a small blue flame burn for as long as possible, thereby reducing the acolhol flavor. and entertaining your guests.
Cherries are one of those fruits that are good for you. The are a good source of fiber, vitamins and minerals including potassium, calcium vitamin A and folic acid. They are also well known for their antioxidant properties. They aid inflammation and soremess too. they are good for anyone suffering from gout. They say we should consume 1/2 cup or 10-12 cherries every day. They also provide natural osteoarthritis relief. Studies show that drinking tart cherry juice twice daily for 3 weeks led to significant reductions in inflammation markers. Good to know for people with arthritis like me. I’m putting cherry juice on my grocery list today. It’s worth a try and can’t hurt.
And the next party I have I’m going try out this recipe and entertain my guests. It should be lots of fun and delight the kids too.

Remember that desserts is stressed spelled backwards. This one will make you smile.
How fun with the Renaissance Fair! We have one in this area in March but we have yet to go to it, maybe next year! I do like cherries but never had it as a cherry jubilees; might make this recipe down the road!
