ON THE BRIGHT SIDE
FOR SATURDAY,SEPTEMBER 14TH, 2019
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a Special Occasion!

Today is National Creme Filled Donut Day which is a great opportunity to enjoy these sweet treats! Donuts came to the United States in the mid 1800’s through the Dutch settlers that were known for thieir pastries. The first donut with a whole in the middle is said to be the creation of American Hansen Gregory. Thankfully someone after Hansen made the brilliant decision to fill that hole with delicious creme filling. These were so well liked that the Boston Creme Donut, perhaps one of the most popular cream filled donuts, became the official donut of Massachusetts in 2003.
To celebrate today, stop at your local bakery afor a box of cream filled donuts!
Yum!
If you can’t see the bright side, polish the dull side .
THOUGHT FOR THE DAY
New mysteries. New day. Fresh Doughnuts.
David Lynch
It’s no secret that I love donuts so I will definitely be celebrating today. Cream filled donuts are really a sweet treat and are one of my favorites. Krispy Kreme makes some delicious ones and I can get them at a store near by. Life's little luxuries are wonderful and have a way of making my days all the sweeter. One of the desserts at my dessert party was a box of donuts and that is what is pictured above. They were awesome!
Speaking of Boston Cream it is a favorite dessert of many in my family so I thought I share a recipe for a Boston Creme Pie today. Not a donut, but a wonderful dessert. A slice of this will certainly make up for any lack of donuts.
Boston Creme Pie
Creme filling:
2 eggs
1 1/2 c. milk
1/3 c granulated sugar
2 tbsp. cornstarch
1/8 tsp. salt
2 tbsp. vanilla
Cake
1 1/4 c. flour
1 c. sugar
1/3 c. butter, room temperature
3/4 c. milk
1 1/2 tsp. baking powder
1 tsp vanilla
1/2 tsp. salt
1 egg
Chocolate Icing:
2 tbsp. butter
3 oz. unsweetened baking chocolate
3 tbsp. water
1 c. powdered sugar
1/4 tsp vanilla
Plance an egg separator over a small bowl, Crack open 1 egg and separate the yolk from the white and then separate the other egg. Save whites for another recipe. In small bowl, place yolks and beat with a fork or whisk until mixed. Stir in 1 1/2 cups milk, set aside.
In a 2 quart saucepan, stir 1/3 c. granulated sugar, the cornstarch and 1/8 tsp. salt until mixed. Gradually stir in egg mixture into sugar mixture. Cook over medium heat stirring constantly, until mixture thickens and boils. Boil and stir 1 minute, remove from heat. Stir in 2 tsp. vanilla. Press plastic wrap on surface of filling to prevent a tough layer from forming on top. Refrigerate at least 2 hours until set but no longer than 24 house. While filling is chilling, continue with recipe.
Heat oven to 350 degrees. Spray just the bottom of a 9 inch round cake pan with baking spray with flour. In a large bowl, beat all cake ingredients with an electric mixer on low speed for 3 minutes. Stopping occasionally to crape bowl. Pour batter into the pan, use a rubber spatula to scrape batter from bowl and spread batter evenly in pan and smooth top of batter.
Bake about 35 minutes or until a toothpick entered in the center comes our clean. Cool cake in pan on a cooling rack 20 minutes, then remove onto a serving plate to finish cooling about 1 hour.
In a 1 quart saucepan, melt 3 tbsp. butter and the chocolate over low heat. stirring occasionally. Meanwhile in a one cup measuring cup, micromave the water uncovered on high 15 to 30 seconds until hot. Remove chocolate mixture from heat. Stir in the powdered sugar and 3/4 tsp vanilla. Stir in 3 tablespoons hot water. Stir in additional water. 1 Tsp. at a time. until icing is smooth and thin enough to spread.
To split the cake horizontally in half, mark the middle point around side of cake with toothpicks. Using toopickas as a guide cut through the cake with a long sharp knife, using a back and forth motion. On a serving plate, place bottom layer with the cut side up. Spread filling over bottom layer. Top with tope of cake and cut side down.
Spread glaze over top of cake, using a metal spatula or back of spoon, letting some glaze drizzle down the side of cake. Refrigerate uncovered until serving. Save any remain cake in the refrigerator. Serves 8.
I’ve also made this cake using a boxed yellow cake mix and instant vanilla pudding and it turned out great too. This will make a double layer cake and you spread filling in the middle.
I hope you all have a SUPER Saturday!

Nat'l creme filled donut day. It should be part of the food group.
Oh gosh. Here we just finished lunch and these pictures have me craving a donut … or several. That's the problem; I can't eat just one.
I have never had Boston cream pie. I might have to get a piece of it sometime when we are out eating at a place that has pie. I love donuts! Especially the creme filled ones! I hope you had one for me today, Ma!
