Celebrate today by sharing your ideas with someone. Generate ideas that lead to solutions or new products. Knowledge grows best when shared and the best ideas come through teamwork. After all two heads are better than one.

I love it when someone shares an idea with me, it’s the best way I learn something new. I don’t happen to have any new ideas, but need some new ones to inspire me. I’ve tried to come up with something new to paint and am at a standstill. I like what ever I do to have meaning for those that I care about
One thing I’m painting for Christmas is the picture below.
Many of the people in my family have an Elf on Shelf that comes to visit through the holidays, so I think they will enjoy this.
I also love to get new ideas of things to cook for dinner. I get tired of eating the same old things all the time and like to add some variety. Today’s new idea for dinner is
Beef Enchiladas
1 tbsp. extra virgin Olive Oil
1/2 onion chopped
2 cloves garlic, minced
1 lb. ground beef
1 tsp. chili powder
1 tsp cumin
salt and pepper to taste
1 can enchilada sauce
1 can corn , drained
1 can black beans, drained and risnsed
8 flour tortillas
2/3 c. m=Monterey Jack cheese, shredded
1/3 c. shredded Cheddar lChesse
For Topping
Quarted grape tomatoes
diced avocado
finely chopped onion
Fresh cilantro leaves
Preheat oven to 350 degrees In a large skillet over medium heat, heat oil. Add onion and cook until soft. Stir in garlic and cook until fragrant. Add beef and cook until no longer pink. Drain fat.
Ad chili powder, cumin an salt and pepper. Stir in enchilada sause and the remove from heat and stir in corn and black beans.l Add a large scoop of meat mixture into each tortillas nd roll up. Placed rolled up tortillas side by side in a 9 by 13 baking dish and top with cheeses.
Bake until cheese is melty, 15 to 18 minutes.
Garnish with tomatoes, avocado, onion and cilantro or salsa
If you like your enchiladas with a kick. finely mince 2 jalapeños and sauté them with the onions for a little extra kick.

Two heads are always better than one...
That is cute what you might paint, Ma! Very festive too! I liked the recipe and copied to make it down the road. Son and family usually come Mondays for dinner since it is his day off. I work Mondays so I'm scrambling trying to figure out what is simple to make. This wouldn't be as it involves a little more preparation, but for next Monday I was thinking of cranberry walnut chicken salad sandwiches on croissants with a side salad. So I'm going to be looking for a recipe for that or a recipe for chicken soup for the crock pot. So that's my 2 ideas I'm sharing :)

That 'elf surveillance' sign is adorable!
So true about swapping tips, throwing out ideas, etc. I used to try to imagine a team of television writers (i.e., Grey's Anatomy) when they all sit down to prepare story lines. Thought that would be incredibly entertaining.
