Today is Be Late for Something Day which is made for people that are never able to be on time. It’s a day to take the opportunity to take your time. The best way to celebrate is to make an appointment and be late for it on purpose. Today is the perfect excuse to be late.
It’s believed that this holiday was started by the Procastinators Club of American , as a way to allow people to take a break from their busy daily schedules. To slow down , take a breath and savor the world around them and enjoy the small pleasures of life. Stop and smell the roses, if you will.
If you can’t see the bright side, polish the dull side .

Most of the time, I am very punctual and even early in most cases. Living life in the slow lane has made me aware that I must plan ahead in order to get anywhere I want to be on time. It takes me longer to get ready than it used to. I only have one speed I go, and that is slow. But every now and then it feels good to be late and have others wait on you for a change. I’ve done a lot of waiting on others in my day. Doctors offices and beauty shops come to mind, they are notorious for making you wait for your appointment and even have rooms called waiting rooms where you can sit and read a magazine while you’re waiting if you wait. Not my idea of fun, It’d be much better if we didn’t have to wait and everything ran smoothly,
It’s never easy being the one who waits and it takes a lot of patience, so why not make a change and have someone wait on you instead. It might be fun for a change.
In honor of slowing down today I’ve decided to make a slower cooker meal for dinner. I call it Crock Pot Thursday. You have to wait awhile for the meal to be done but it’s worth it.
Crock Pot Meatball Stroganoff
This recipe calles for mushrooms, but you can omit them if you want. They will still taste good. You an use cream of celery soup instead of mushroom.
1 lb frozen beef meatballs, about 22 meatballs
1 16 oz can cream of mushroom soup.
1 envelop onion soup mix
2/3 c. beef broth
8 oz. mushrooms sliced
1 c. sour cream
3 tbsp. flour
Egg Noodles
Place frozen meatballs in slow cooker. In a medium bowl combine mushroom soup, onion soup mix and beef broth, and pour over meatballs. Gently stir in mushrooms.
Stir in sour cream and if sauce is too runny,sprinkle in the flour. Cover and cook on low 4 house.
to achieve desired consistency.
Serve over egg noodles prepared to package specifications.
I have a busy day ahead and love using the crockpot to cook. Just fix it and forget it and dinner will be done when you want it. As I’m decorating for fall here. That is what my pictures are of today. They are from last year. This year’s is still a work in progress. They are fun to do and I’ve a mix of everything, including halloween and thanksgiving.

Sometimes we don't mean to be late, but time seems to slip away from us.
How cute with your decorations from last year Ma! I'm sure your decoration will be great this year too! What a delicious sounding recipe. I do like my crock pot for that reason. To prepare and be done with a meal. I am usually running right on time or a few minutes early but sometimes I do have those days when I'm a few minutes behind. Always like to be early or on time; feel better than way.

Your dinner sounds good and like something Louis Dean and I would like! I’ve never bought frozen meatballs before but I think I’m going to get some next time I’m out.
I’m a late person. Usually. However I’m always on time for doctor appointments and the airport!
If I get somewhere early, it’s a complete accident!
OK, I realize this 'be late day' is a tongue-in-cheek sort of thing … but oh, my word. My stomach would be in such knots! Ya, I'm one of those 'hurry-up-and-wait' folks. Realizing that might be as much a liability as being late, I usually hang out in a nearby parking lot with a book until it's a few minutes before the appointment.
I can hardly wait to start making stomach-sticking hearty meals like this in the slow cooker! Keep 'em coming, and I'll start adding to my recipe collection! :)
