ON THE BRIGHT SIDE
FOR THURSDAY,SEPTEMBER 19TH, 2019
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Yo-Ho, It’s International Talk Like a Pirate Day which means it’s a time for pillaging and imbibing of rum. Pirates have been talking trash and looting treasures for centuries now. And Pirates have been all the rage in recent years since Dave Barry promoted the holiday and its’s been popular every since Are you ready to pirate it up. You simply need to tune up your piratical vernacular and pour a few fruity drinks with umbrellas in them and gather friends to celebrate the day in your piraty best. There are songs to be sung nd wenches to be clenched and who can resist a backyard barbecue with grilled pineapple salmon made by walking the plank . Talk Like A Prirate Day is here. Yarrgh!
If you can’t see the bright side, polish the dull side .
THOUGHT FOR THE DAY
Nothing you wear is more important than your smile.
Connie Stevens.
This is one of those fun holidays that kids and adults like to celebrate. The pictures today are of some of my grandchildren in their Piarate gear. It seems every year, I gain some new ones. Of course along with the pirates we get a few Princesses too. What would we do without them? Instead of saying good morning today, you say Ahoy Matey instead.
I love these fun holdays and wish there were more of them. Laughter is good medicine and we all could benefit from smiling more. Studies show that a genuine smile contributes to your heath. It can lift your mood, eliminate your stress and relieve any pain you’re feeling. It can even regulate your blood pressure. It boosts your immune system stoo, protecting you from many possible diseases. Most important it makes you feel good, regardless of your current mood, as it highlights the natural feeling of joy!
And since I mentioned it, I thought I’d follow through with a recipe for some Pineapple Salmon too.
Pineapple Salmon Burgers
2 tbsp. mayonnaise
1 tbsp. ketchup
1 tbsp. sweet relish
2, 2.5 oz. pouch of Pink Salmon
3/4 c. italian seasoned bread crumbs
1/4 onion, finely chopped
1/4 red or green bell pepper, seeded and finely chopped
2 tbsp. pineapple juice from canned pineapple slices
1 clove garlic, minced
3 tbsp. chopped cilantro
1 egg, beaten
1/2 tsp salt
2 tbsp. olive oil
4 canned pinapple slices, drained and patted dry
4 hamburger buns, toasted
toppings: lettuce tomato, pickles
In a smal bowl, mix the mayo, ketchup, and relish, set aside. In a Medium bowl, combine salmon, bread crumbs, onion, pineapple juice, garlic, cilantro , egg, and salt. Form the mixture into four 4 inch patties
In a large non stick skillet, heat the oil one low heat. Add patties and cook for 3 to 4 minutes on each side until golden and caramelized. Remove from the pan and set aside
Increase heat to medium high and add the pineapple slices. Cook for 2 to 2 minutes on each side until golden brown. Spread each of the botton halves of the buns with the mayonnaise mixture. Add lettuce, tomato slices and salmon burger. Add pineapple slice on top and serve.

I had a great day shopping yesterday, I found what I went for but also got a few things not on the list. I got my first pumpkin pie of the season and also found a new pair of winter boots. I needed some and the price was right - $ 29.98! I usually have a hard time finding them, and they are much higher priced too, so when I tried these on and they fit and were comfortable I went ahead and got them. The pie was delicious too. I also got a set of non stick skillets, as mine had seen their better days.
I hope you all have a GREAT day. Happy Thursday!

Shiver me timbers, it's talk like a pirate day, have fun and laugh a lot, it's good for you!
Always good to have a day to pretend and pirate day is a great one whether you chose to be a pirate or a princess :) Such cute pictures of your grands celebrating the day! I like that recipe for the pineapple salmon burgers!
betty
Gosh, seems like only yesterday I was trying my impression of a pirate. Ha. Always fun to dress up, regardless of one's age.
That recipe does sound yummy. Blog friend Terri recently bought a bottle of roasted pineapple/habanero marinade (Robert Rothschild). I haven't been able to find it at our Wal-Mart, but I'll bet that would be good on the salmon, too.
Pirate day? I bet kids loved that.
