Today is Senior Citizens Day which raises awareness of and recognizes the contributions senior citizens continue o make in the society of the United States.
A senior citizen is a person of at least 60 years of age and part of the fastest growing demographic world wide. President Ronald Regan was the initiator of the Senior Citizens Day is August, 1958.
Theere are also different dates and a variety of appreciation days for the elderly people world wide. But they all have one aim, to appreciate the elderly part of our communities.

Since I’m well over 60 years of age I’m proud to say I’m a senior citizen. I’m not ashamed of my age and can say I’m proud of my white hair that shows how many years I’e put into life so far. Growing older is not for sissies. It took a lot of work to get to get to the age I am now and I’m glad to have reached a point in life where I can take it a little easier. I call it life in the slow lane. Every thing I do is slower than it used to be. I have one speed and that is slow. Thank goodness we have more time on our hands after we retire because it takes every bit of it to get things done, at least for me.
There are some that have more get up and go than I do, and I’m happy for them, but as or me my get up and go, got up and went.
There are benefits to life in the slow lane, you see more than when you’re going fast. You really notice what’s going on around you. And it reduces stress, no hurry, no worry. It’s makes you very organized. If you want to do something you have to plan ahead as it takes longer to get ready. It’s like being on a permanent vacation. where there is no longer appointments or obligations to go too. There’s plenty of time for afternoon siestas and home cooked meals.
This week I decided to do breakfast for dinner which has provided several really good meals for me so I thought I’d share the recipe.
Impoaaivly EASY BREAKFAST BAKE
1 lb. ground BULK breakfast sausage
1red bell pepper, chopped
1/2 Tsp salt.
2 Tbsp. chopped sage
1 onion, chopped
3 c. frozen hash brown potatoes
3/4 c. Bisquick baking mix
2 c. shredded Cheddar Cheese
2 c. milk
1/4 tsp. pepper
6 eggs.
Heat oven to 400 degrees. Spray 13 by 10 inch baking dish with cooking spay. In a skillet, cook sausage, bell pepper, and onion over medium heat, stirring occasionally until sausage is no longer pink, drain.
Mix sauce mixture.potatoes and 1 1/2 c. of cheese in baking dish. l In medium bowl mix Bisquick, milk pepper, and eggs until blended. Pour over sausage mixture in baking dish
Bake for 30 to 35 minus until knife inserted in center comes out clean. Sprinkle with remaining 1/2 half cup of cheese. Bake about 3 minutes longer until cheese is melted. Let stand 5 minutes before serving.
Makes approximately 12 servings depending on the size.I cut mine into larger squares as it was for dinner. I had some apple sauce a and biscuits with butter on the side. I didn’t have any Cheddar Cheese and used Montery Jack in stead. It was Deliciou! I always try to make do with what I’ve got on hand instead of going out and buying what I dob’t have. However, Cheddar Cheese is now on my list for the next time I go shopping.

I love being a senior citizen, it's the reward for years of hard work.
I like that recipe! Looks delicious! We do breakfast for dinner sometimes too here. Always a nice treat! I'm a senior citizen too and I take advantage of whatever discounts I can get as a result. Mainly now it is at the movie theater and at Goodwill on Tuesdays, but those pennies add up!

Seems funny to think we Senior Citizens are in the majority now. Recipe sounds good and I would imagine it would freeze well too.
