Today is National Potato day which honors the popular parts of diets around the world for centuries - the potato.
Not only are potatoes tasty, they are good for you. They contain high levels of important vitamins and minerals, such as vitamin C, potassium and iron.
More that 45 billions of pounds are harvested in the U.S. each year. We use them to make baked potatoes, mashed potatoes and home fries and french fries…the list is endless.
To celebrate today, enjoy some potatoes prepared your favorite way .

I am a potato lover. Hardly a meal goes by but there is not a potato of some kind included in it. Even when I have a sandwich, I’ll have some potato chips on the side.
Last week I went out to lunch and had a burger with DD. It was one of the most usual burgers I’ve ever had, as it not only had a burger it also had an egg and crispy home fries on it. It was called the Brunch Burger and was delicious. A combination of breakfast and lunch in one sandwich. So for today’s recipe, I thought I look for a recipe for crispy Homefries to share.
Fried Potatoes
4 c. thinly sliced potatoes
1 onion, thinly sliced
1 1/2 tsp salt
1/4 tsp. pepper
Heat oil in a non stick 10 inch skillet . Add potatoes and onion. Sprinkle with salt and pepper. Cover and cook over medium heat about 20 minutes, stirring occasionally. Un cover and cool 10 minuts longer, stirring occasionally until potatoes are brown and tender. The crispier the better.
I might have to try some on the next burger I have it was a very tasty combination. And instead of a plain egg sandwich, the next will have some home fries in it too.
Today’s pictures are of our get together yesterday, which thankfully included a variety of potatoes.

Looked like a fun gathering, Ma! That burger you had sounds so delicious! I have seen on menus burgers with eggs but have never had one myself. We are barbecuing steaks this afternoon for dinner with potatoes we are putting in a foil on the grill so we'll be honoring national potato day! I love potatoes but these days limit how many I eat of them.

I LOVE topping my burger with an 'over-easy' egg! Never heard of the home fries, tho' … my hubby would really enjoy that.

I have seen the burgers with the egg but just can't imagine it being good...I will take your word for it.
