Today is National Waffle Day which honors an American inventor named Conelius Swartwout who received the first U.S. patent for a waffle iron on this day in 1869. Waffles are a delightful breakfast food and can be paired with almost any topping. Butter and maple syrup, fruit and whipped cream, a big scoop of ice cream or even a helping of fried chicken. The choice is yours!
All you need is a waffle iron and a yummy recipe to cook up some homemade waffles and have breakfast for dinner tonight!!

I do like waffles but most of the time fix pancakes as my waffle iron is stored away up in the cupboard and doesn’t come out very often. It’s really called a sandwich maker but doubles as a waffle iron, so I haven’t had a reason to get another one when this works just fine. I suppose if I had to make them for a large group I’d like a different one, but most of the time it’s just me here to cook for.
I do have a party to go to tomorrow so today’s recipe isn’t for waffles, but for a dessert called fruit pizza. Which is what I’m making to take along to share tomorrow. It’s a great summertime dessert
Fruit Pizza
1 roll refrigerated sugar cookie dough
1 pkg. 8 oz cream cheese, softened
1/3 c. sugar
’1/2 tsp. vanilla
1 c fish or canned peach slices, drained
1 c. halved or quartered strawberries
1 c. blueberries
1/2 c. apple jelly
Heat oven to 350 degrees. Spray a 12 inch pizza pan or a 10 X 13 inch baking dish with cooking spray. Break up cookie dough in pan and press dough thinly at bottom of pan to within 1/2 inch of edge.Bake about 20 minutes until golden brown. Cool completely.
In a small bowl beat cream cheese, sugar and vanilla with mixer until fluffy. Spread mixture on the cookie crust. Arrange fruit over cream cheese.
Stir jelly until smooth, Spoon or brush over fruit. Refrigerate until chilled . Cut into wedges or squares to serve. Cover and refrigerate any remaining pieces. Makes 12 servings. I’ll probably make a double batch for the party.

Oh, that (next-to-last) photo of your Precious One and her cousin tugs at my heart strings! I'm going to clip and keep that fruit pizza recipe to take to our friend's BBQ next month. Would you, perhaps, take a picture of yours and share?
Haven't had waffles is quiet a while...cute pictures.
That fruit pizza sounds delicious! I have never had a waffle iron or the like. I do like waffles but haven't really made any of them. It is fascinating that a lot of the motels we stay at that offer free breakfasts they have a waffle maker there and it is usually popular with the other guests making them.
