Hope is something we all need to have. There are times we all hope for a better day, better health, and a better life. Hope is what keeps us going. Hope keeps us alive and willing to try another day.
Tuesdays are alway my day to get organized, check my to do lists and make new ones. Get the grocery list ready and try not forget what I need. My memory only takes me so far and I need those lists as well as my calendar.
Living life in the slow lane makes it easier in someways and harder in others. I may not have a lot to do, but it’s not always easy for me either, so it’s important that I keep those lists in front of me .
It’s also Taco Tuesday and I’ve a new recipe to try out. I’ve made taco soup and taco salad so today’s recipe is for a taco casserole.
Taco Casserole
Makes 6 servings
1 1/2 lbs. ground beef
1 pkg. Taco seasoning mix
1 can pinto beans, drained and rinsed
1 can tomato sauce
1 can corn, drained
1 c. cheddar cheese
1 c. coarsely crushed tortilla chips
Preheat oven to 400 degrees. Brown meat in large skillet. Drain fat. Stir in seasoning mix, beans tomato sauce and corn. Bring to a boil. Spoon into a 2 quart baking dish. Sprinkle with cheese and tortilla chips.
Bake about 10 minutes or until cheese is melted. Serve with assorted toppings like tomato, lettuce and sour cream if desired.
The pictures today popped up in my memories of one year ago today. They are of my herb garden that I planted and that had hoped would winter over. Sadly they did not and I need to plant some new ones, I love having some fresh herbs to cook with.

Yum on that Taco casserole! I’m going to cook cabbage tonight to go with some smoked sausage and maybe a baked potato. And pepper poppers! I keep forgetting to get hot sauce and sour cream so I’m going to the store specifically for those two things! I’m with you on needing lists! Happy Tuesday to you!
For as long as I can recall, I've been a maker of lists … both for my daily activities and the grocer. 'No idea WHY I began filing those pages at each month's end -- but recently was totally stumped to remember when I'd mailed something important. Thankfully, I was able to go back through the prior month's pages and find that entry. Whew!
