Today is the Great American Backyard Campout which is a time to spend a night out under the stars. Thousands of people will set up a tent in the backyard or a park to celebrate life in the great outdoors.
The Great American Backyard Campout is sponsored by the National Wildlife Federation. Camping out is a wonderful opportunity to observe and learn about the wildlife that surrounds us.
To celebrate, set up a tent and camp out.

I used to camp a lot, but those days are long gone for me. I never camped in a tent, but I did enjoy camping. For many years, we’d leave on Friday after work and camp for the weekend. After I retired I even bought a camper and enjoyed having a place to go out in the country in the woods for a few years. It was my home away from home.
Now I’m not much of a camper at all and prefer the comforts of home, but have lots of great memories of those days.
We used to do a lot of cooking on the campfire and of my favorites was cooking a meal wrapped in foil packets.
Hamburger Hobo Dinner
Makes 4 servings
1 lb. lean ground beef
1 pkg. dry onion soup mix
4 potatoes pealed and sliced
2 cups carrots chopped
1 onion sliced
1 tsp garlic powder
salt and pepper to taste
condensed mushroom soup
Combine ground beef and dry soup in a bowl. Form into 4 patties and set aside. In a large bowl combine all remaining ingredients and mix well.
Spray a 12 by 18 inch piece of foil with non stick spray. Place 1/4 of the vegetable mixture in center of foil and top with 1 beef patty. Add 2 tbsp. condensed mushroom soup on top of each patty. Seal foil packets well.
Place beef side up and bake on campfire grill for about 45 minutes.
You can do these in the oven at home too.
The pictures today are of my backyard. No tent, no campfire, but lots of lovely shade to enjoy on a hot summer day.

In summer I camp out a lot on the sunporch...
I like those foil type meals. I have a lot of them with chicken and salmon as well as beef that we use during the hot summer months. They are easy just to put on the grill and not have to fuss too much with them. I'm not a camper but I remember growing up every so often in summer we would have a camp out in our backyard. We would maybe sleep half the night there and then go into our beds later in the night. Great memories for sure!
