Today is Eat Your Vegetables Day which is a day to remember what your parents used to tell you, to eat your vegetables. They were right. Vegetables are essential for living a long, healthy life and they are delicious.
Vegetables contain nearly no fat and are healthy and tasty. They a good during diets because eating a great amount of vegetables does not have a lot of calories.
There are many ways to celebrate today. Swap your junk food snack for fresh vegetables. Make a salad or become a vegetarian for the whole day. Enjoy !

Enjoy the little things.
Vegetables are good and good for us too. I’ve mentioned before that there are times in the summer, when fresh veggies are available at the farm markets, I will often eat nothing but vegetables. We only get them for a short time and the added flavor of anything fresh, cannot be beat.
Salads are one of my favorite ways to eat veggies in the summertime. So I’m sharing one of my favorite salad recipes today. Salad is much more than just an appetizer or side dish.
Chef Salad
Makes 2 servings
1/2 head Iceberg lettuce, cleaned and shredded
1 oz. Cheddar cheese, shredded
1 red tomato
1/2 onion, sliced into rings
1 carrot, sliced
1/2 cup mushrooms, sliced
1/2 cucumber sliced
2 hard boiled eggs, sliced
2 slices diced, cooked bacon
1 small green pepper cut into bite size strips
4 oz. cooked and diced ham
Cook bacon and dice into pieces . Hard boil eggs, peal and sliced. set aside.
Wash and prep all vegetables, including mushrooms. Set aside
Build your salad starting with lettuce and finishing with cheese. Toss everything together and top with your favorite dressing.
It’s Monday morning again, a fresh start and a clean slate. This week can be most anything we want it to be. Here at my house I’m going to start with the laundry and go on from there.
I’m going to try very hard not to complain about the rain we’ve been having, I guess it could be worse. I am looking forward to some warmer days ahead to enjoy.

Sadly it has been more soup than salad weather the past few days, but warmer days are coming!

Veggies are so yummy and can be fixed in such a variety of ways one never gets tired of them! Wow all your rain!! It has been a very unique year weather wise everywhere!
