Today we celebrate Earth Hour day, which is an annual environmental campaign that brings attention to the affects of climate change by asking people to switch off lights at homes and businesses at 8:30 pm. local time.
Electricity has becomes such an enormous part of our lives that it’s become difficult for us to imagine a moment with out it. Everything has a price and it’s becoming increasing clear that the price of all our lives being made easier is the well being of our planet.
To celebrate, think about what you could do on a daily basis to save energy. Some people enjoy Earth Hour with a candle lit dinner and turn off their lights for one hour.
If you can't see the Bright Side, polish the dull side

Saturday’s are usually my day to cook for the weekend and this is not different than all the rest. I’ve still got some leftover chili that will be great for lunch, but I need to fix something new for dinner.
This dish is not fancy or unusual but one I call comfort food for sure.
Easy Tuna Noodle Casserole with Cheddar Cheese Casserole
Makes 6 servings
12 oz. egg noodles, cooked and drained
2 c. green peas, cooked
2 cans cream of mushroom soup
1/2 c. milk
1 2/2 cups sharp cheddar cheese
2 cans tuna, drained and flaked
1/2 tsp. salt
Pepper, to taste
1 cup French fried onions
Heat oven to 350 degrees. Grease a 2 1/2 to 3 quart casserole.
Combine the noodles, peas, soup, milk, cheese and tuna. Add salt and pepper to taste. Spoon into prepared baking dish.
Sprinkle french fried onions over the top of casserole. Bake for about 20 minutes until hot and bubbly and onions are browned.
If you prefer homemade sauce, omit the soup and the milk and replace them with about 2 1/2 cups of thickened white sauce. This recipe makes about 1 cup, so adjust accordingly.
White Sauce
1 tbsp. butter
2 tbsp. flour
1/2 tsp salt
dash of pepper
1 c. milk
Melt the butter in small sauce pan of low heat. Whisk the flour into the butter Add Salt and Pepper. Cook over low heat stirring for at least 2 minutes. Slowly add milk, constantly stirring. Continuers cooking slowly until smooth and thickened.
I’ll be lighting my candles for dinner tonight in honor of today’s holiday. Candles make any meal special anyway.
We’ve had some warmer days this week but they say that tomorrow is to be winter like. March is letting us know it’s not done with us just yet. On the bright side, it’ll quickly rebound with a warmer week ahead.
