Today is National Pickle Day which honors the culinary history of pickles. This versatile vegetable can be enjoyed as a condiment, snack or side dish.
Pickles are thousands of years old. In ancient Egypt people consumed pickles for their nutritional value and because they were thought to enhance beauty. Cleopatra attributed her good looks to her full diet of pickles. Centuries later Napoleon believed that pickles offered health benefits for his armies, so he offered a huge cash prize to anyone who was able to safely preserve them.
Be as cool as a cucumber and celebrate today by stocking up on your favorite kind of pickles!

Years ago a relish dish was a popular item on any dinner table. I still have mine and will often get it out when having company for dinner. It is a divided dish that holds pickles and olives and celery and carrot sticks. It is the perfect compliment to any meal.
Everyone has their favorite kind of pickle so sometimes they are the only thing is my relish dish. Sweet jerkins, dill pickle spears, and bread and butter pickle chips are just a few of our family favorites.
They say that pickles are good for you. They include a good supply of vitamins, minerals and antioxidants which contributes to diabetes control, improved digestion, liver protection, a supply of probiotics and the even the ability to heal ulcers. The only caution is that they are high in sodium so should be eaten in moderation.
Today’s holiday tip: Prepare for drop in visitors.
Although I’m not hosting Thanksgiving dinner here at my house it is good to be prepared for some unexpected visitors. I’ll be getting some cheeses, crackers and desserts to have on hand just in case.
It’s midweek and today I hope to get out and do some grocery shopping. I need a few things to complete my fixings for our Thanksgiving Feast.
We’re to have a little sunshine today so it’s a great day to get out and about!

Why not enjoy a pickle or two today...they are good and good for you!
I never realized all the pros for consuming pickles! So glad you shared your pretty relish tray … so I'll remember to add it to our Thanksgiving table. I still have my mother's; her using them for special occasions. My favorites were the black olives; unfortunately, I wasn't so generous as to share. LOL!
I like pickles on sandwiches. So tasty :) Might have to do a relish tray this holiday season; haven't done one in a few years.

Oh how I love pickles! And thank you for reminding all of us about the wonderfulness of the "relish tray". They seem to be from a bygone era but I sure do remember them well. My mother-in-law would always have a relish tray on the table for Thanksgiving. Growing up, we always had a relish tray on the table for family feasts. We loved it.
Now? When Mom was alive, it was always on her table. Now, not. I miss that. We miss her.
