Today is National Lighthouse Day which honors and commemorates a beacon of light that symbolizes safety and security for boats at sea.
On August 7th, 1789 through an Act of Congress, the Federal Government took over the responsibility of building and operating our nation’s lighthouses. Over the years , lighthouses have saved many ships, and untold number of lives.
With the advent of radar and GPS technology, lighthouses have taken a back seat in guiding ships to port. However they reman the universal symbol of safe harbor to ships and communities that rely on the sea for their livelihood.
Today is also National Night Out, Global Forgiveness Day, and National Raspberries in Cream Day

Lighthouses don’t go running all over an island looking for boats to save: they just stand there shinning.

We have several lighthouses along the shore of Lake Erie and todays pictures are of one I visited a few years ago. There are many that have worked to preserve these beacons of safety and this one was in one of our many state parks.
My only great accomplishment yesterday, other than the usual house work, was that I had to do some cooking as I ran out of leftovers to eat. I made a delicious stove top casserole and below is the recipe.
Cheddar Chicken Bacon and Ranch Casserole
1 lb pkg. pasta of your choice
8 slices bacon diced
1 tbsp. butter
2 bones skinless chicken breast halves cut into bite size pieces
2 tbsp. flour
1 pkg. range dressing mix. 1/2 oz.
2 c. milk
1 c. shredded cheddar cheese
salt and pepper
Cook the pasta according to package directions, drain and keep warm.
Cook bacon in large skillet till crisp, drain on paper towels . Drain all but one tablespoon bacon drippings from the pan.
Season the chicken with salt and pepper. Add butter to the reserved bacon drippings in the skillet and then add the chicken. Cook until tender and slightly browned.
Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk and cook, stirring occasionally until thickened and bubbly. Stir in the cheddar cheese, half of bacon and the pasta. Cook and still until cheese melts.
Serve each plate of pasta with more bacon sprinkled over the top.
Serves 4
Now I have some leftovers to eat today and tomorrow. I do love cooking once and then having meals already prepared ready to heat up and enjoy for several days.
After a couple of very hot and humid days we’re to have rain today and then a cool down comes our way. A couple of days like that were enough for me.
Right now it is looking like Thursday is going to be the best day to get outside for the yard work. Meanwhile I’ll continue to work inside in the air conditioning.

That recipe looks delicious. I too like to cook ahead and then just reheat, makes things go by smoother especially on busy work days. We had hot weather the past few days, now a "cooling" trend but that just means the potential for storms is coming back so it makes it a bit more humid.

I've never had an opportunity to visit a lighthouse … but I think of them as being almost magical. (Silly, but there you have it!)
