Today is Ride the Wind Day which celebrates the last days summer and the warm summer breezes.. You can catch a ride with a breeze, or float along slowly like a gentle late summer cloud.
Summer will soon be over. Catching the drift of this day is easy. Just relax and let the wind carry you away in what ever direction it is blowing. It’s a day to go outside and immerse your self in the fresh air. There is no better feeling than the wind in your hair as you look out at a beautiful horizon. Leave your troubles and worries behind for a spell as you waft in the air.
Just kick back and enjoy one of the last days of summer.

One of my favorite places to go and enjoy a breeze is at the beach on a summer day. I’ve shown the pictures of my beach trip this year before, but am showing them again. It is a very relaxing and enjoyable way to spend an afternoon.
I’ll be riding out to our county fair today with my sister and her hubby. After several rainy days it’s to be sunny and in the upper 70’s. A perfect day for being outside. I’ll try to take lots of pictures to show you later on.
They say today is also Sponge Cake Day so I thought I’d share an old recipe that I got from a friend many years ago. She had made it for a tupperware party that I went to and it was delicious.
Inexpensive Sponge Cake
Grease and flour an 13 by 9 inch baking pan
Beat together :
4 eggs
2 c sugar
1/2 teaspoon salt
2 tsp. vanilla
2 tbsp. butter,
melted in 1 c. boiling hot milk
Add
2 c. flour
2 tsp. baking powder
Bake at 350 degrees for about 30 minutes. Test with a toothpick to make sure it’s done.
Broiled Icing
Mix together:
1 c. coconut
6 tbsp. soft butter
3/4 c. brown sugar
4 tbsp.cream
1/2 c. chopped nuts
Spread on warm cake after it has come from the oven and then broil until brown.

When I had the dogs out early this morning there came the most delicious, cool breeze. I was certainly surprised, but felt my whole head smile. Now I'm trying to recall who sings, "Summer Breeze." (Seals & Croft, maybe. I'm too lazy to look it up. lol.)
Love your cake recipe Pam! We are having a very breezy, rainy and cool end to the summer here today! At one point it was tipping it down, but it is a bank holiday weekend here, so the weather will probably not be very good the whole weekend. That is usually par for the course! We hope to get to the beach at least once more before the season's end! HOpe you enjoyed the fair! xoxo
