Today is National Honey Bee Day which is an opportunity to show our appreciation for the hard working Honey Bee, who works to hard to produce the liquid sweet treat, that is one by so many.
They say that many bees travel 55,000 miles to produce one pound of honey. To get that pound of of hone, those bees to gather nectar from two million flowers.
This holiday was established in 2009 for beekeepers, as a way to promote honey and to encourage education programs. But this special day is not limited to beekeepers. After all they produce honey we all can enjoy and are vital to the pollination of a wide array of our fruits and vegetables.

I love honey and do appreciate the hard working bees that produce it. I usually get my honey at our county fair each year which is coming up next week so I hope to get some more. They have a booth where honey is sold from beekeepers that live locally. It’s amazing to taste the many different varieties they have. The taste comes from where the bees gather the pollen.
Honey can be used as a substitute for sugar in many foods and drinks. Though it has more calories than sugar, when consumed with warm water, honey helps digest the fat stored in your body. And honey with lemon juice or cinnamon helps in losing weight. It is used for healing wounds, and burns, preventing infections, soothing inflammation in the respiratory system, eliminating coughs and colds, and in balancing blood sugar.
One of my favorite ways to enjoy it is in a cup of hot green tea with lemon in the winter time and cold in the summer. Both are good and good for you too.
I got to go to an Amish Vegetable and Fruit Market yesterday with my sister and BIL. It was a huge place where they also auction off large quantities to commercial buyers, but also sell to individual buyers and that is what today’s pictures are of.
Today I’m going to be busy mixing up some some veggie squares for tomorrow’s party so I though I’d share the recipe with you all.
Vegetable Crescent Pizza
2 cans refrigerated crescent rolls
1 8 oz. pkg. cream cheese softened
1/2 c. ranch dressing
1/2 c. shredded carrots
1 cup small broccoli florets
3/4 cup quarter cherry tomatoes
3/4 cups quartered cucumber slices
1/2 cup chopped yellow bell pepper
3 medium green onions, sliced
Heat oven to 350 degrees. Grease a 15 by 10 inch pan with shortening. Unroll both cans of dough. Separate into 4 long rectangles. Press in bottom and up sided to form a crust.
Bake 14 to 16 minutes until golden brown. Cool completely
In a small bowl, mix cream cheese and dressing until smooth. Spread over crust. Top with vegetables. Serve immediately, or cover and refrigerate until served. Cut in 8 rows by 4 rows.
I also added some cauliflower and red bell pepper to the mix.
Makes 32 servings

That Amish market looked interesting! I have a few recipes that use honey in it. Next time I make hot tea, I'll have to try some honey in it.

These properties of honey are amazing … much I did not know!
Those veggie pizza squares sound like a novel idea for a gathering. I'm going to see if they don't sell pre-mixed veggies in the freezer section. We're so bad here at the house about buying lettuce and fresh produce … enjoy for a 2-3 meals, then each pretend we don't see it again.
Veggie pizza.... a mainstay at our house. Love it!! I add some shredded cheddar cheese to the top of the pizza and that makes it real yummy too. I don't put tomato or cucumber on our but I do put grated radish. A note to Mevely317 above: I don't think frozen veggies will work on the pizza, as all the veggies have to be really dry or the crust will get soggy. I don't even use cucumbers or tomato for that very reason. XOXO Love, Andrea
