Today is National Waffle Day which gives us an opportunity to shake up breakfast, or dinner with something different for a change. Today marks the anniversary of the first US patent for a waffle iron in 1869.
Waffles are a delightful breakfast food and can be paired with almost any topping. Butter and maple syrup, fruit and whipped cream, a big scoop of ice cream or even a helping of fried chicken. The choice is yours.
It’s simple to celebrate this day, cook up some waffles and have breakfast for dinner tonight !

I do love waffles and I got some at the fair yesterday. These are not the usual breakfast variety. They are crispy and coated with powdered sugar. They are a real treat for me as I only get them once a year when I go to the fair. I could make them for myself if I wanted to and I found a recipe for these deep fried sugar waffles. The only thing I need now would be a cast iron Rosette iron which is what you use to make them. Not the usual waffle iron either.
County Fair Waffles
2 tbsp. granulated sugar
1 tsp. salt
2 eggs
2 tbsp. vegetable oil
2 c. water or milk
1 c. flour
Vegetable oil for frying
Powdered sugar
Beat together, sugar, salt and eggs with electric mixer on medium speed. Beat in 2 tablespoons oil, the water and flour until smooth. In 3 quart pan, heat oil, 2 to 3 inches, to 400 degrees.
Heat rosette iron by placing in hot oil one minute. Dip hot iron in batter to just top edge and fry about 30 seconds until golden brown. Immediate remove the iron and invert onto paper towels to cool. Sparkle with powdered sugar just before serving.
We had a great time at the county fair yesterday and I did get lots of pictures to share. One of my nephews and his son even came out to join us. It was a beautiful day. Today is supposed to be another lovely one for us. I got the yard work done on Wednesday so I have today to just enjoy it. It’s my day for a hair cut, so I do have an excuse to go out. Sunshine on my shoulders always makes me smile.

When we focus on what is important in life, the days are always brighter.
It's been a looooong time since I made any waffles. My iron is so old, its cord has a fabric cover. (Remember them?) Not sure if it's even safe to use any more.

I like the idea of a waffle day and I am happy you were able to get some of your favourites at the fair yesterday. I have never made Swedish Rosettes, but have always wanted to try them. Those French Waffles look amazing! I think it's an unwritten rule of the Universe that Fair food always tastes better (than others). … Maybe it's all that fresh air? So glad the weather cooperated and you had a good time!
I have a small grill that I use. Years ago a friend bought me the waffle plates that go on it. I am ashamed to say I have never used them. Not much into waffles, I guess.
