Today is Go Caroling Day is a wonderful, rewarding, and memory filled day. By far more popular decades ago, Christmas holiday caroling is a great opportunity to enjoy the holiday and appreciate its meaning.
Christmas caroling remains popular in many areas and among many groups. Scouts and youth groups often partake in this special musical event. Even family parties and business parties sometimes produce an impromptu caroling event.
The point of Go Caroling Day is to get out and share the spirit of the season, however you celebrate it, with everyone.

I do have some fond memories of Christmas caroling both with the Scouts and with the youth group at church when my children were young. We’d go to nursing homes and it was wonderful to see how much they all appreciated the visit.
I also remember when we’d have carolers come to our house singing outside the front door and then sharing some Christmas cookies with them to cheer them on their way. That was many years ago now and haven’t seen anyone doing that in a long while.
I don’t sing much at all but do love to listen to Christmas music. There are so many wonderful songs it’s hard for me to even choose a favorite. I really like them all.
This is the last of our family Christmas pictures today. The group pictures are of our White Elephant gift exchange game. It was fun and even the youngest took part.
We’re supposed to be a little warmer than we have been for the rest of the week, but still it’ll be a cold one here. Bundle up and keep warm everyone !

There is a food holiday to celebrate every day of the year!
It’s National Fried Shrimp Day
Americans' preferred method for preparing shrimp is frying. Generally this means that individual shrimp are dredged in flour or batter and fried in oil until their coating is browned and crispy. Not all that difficult to make. There is no doubt about it my favorite is Red Lobster’s coconut shrimp and I found a recipe for it to share with you all today.
Red Lobster Coconut Shrimp
1 cup plain bread crumbs
1/4 cup cornstarch, mix with coconut and bread crumbs
1 cup sweetened coconut flakes
1/2 cup pina colada mix
1 tablespoon powdered sugar
3 tablespoons spiced rum, optional
1/2 cup cornstarch
vegetable oil for deep frying
1/2 pound large shrimp
Red Lobster Pina Colada Dipping Sauce
1 cup pina colada mix
1/4 cup water
2 tablespoons crushed pineapple, drained
1 tablespoon sweetened coconut flakes PLUS
1 teaspoon sweetened coconut flakes
3 tablespoons powdered sugar PLUS
1 teaspoon powdered sugar
1 1/2 teaspoon cornstarch
3 teaspoons cold water
Mix bread crumbs, 1/4 cup cornstarch, and coconut in a deep bowl and set aside.
Combine Pina Colada mix, powdered sugar and rum or water in a small mixing bowl and set aside. Place 1/2 cup corn starch in a separate bowl.
Heat oil for deep frying. Oil is ready for frying shrimp with it reaches 375 degrees F. Coat shrimp first in corn starch, then into the Pina Colada mix, then dust shrimp in bread crumbs, coconut mixture. Second coating place back into Pina Colada mix, then again into coconut, and then the bread crumb mixture.
Place prepared shrimp carefully into hot oil. Fry until golden brown, remove from fryer and drain.
For Red Lobster Pina Colada Dipping Sauce: Mix Pina Colada Mix, water, crushed pineapple, coconut, and powdered sugar in a sauce pan.
Heat on medium low temperature until sauce begins to simmer, stirring frequently. Let mixture simmer slowly 10 to 12 minutes.
Mix corn starch and water together, add to sauce and blend well. Let mixture simmer for 3 to 5 minutes longer while stirring during and after adding cornstarch. Remove from heat and bring to room temperature. Sauce is served at room temperature with Parrot Bay Rum Shrimp.

Sounded like a fun game you played at your family's gathering, Ma! I might have to try that red lobster shrimp recipe. These days when we go out to eat, I find myself ordering shrimp a lot of the times.

How neat it would be to join in a carol-ing troupe! That's a great idea to visit a senior center or nursing home.
After years and years of enjoying shrimp just about every way there is, about 10 years ago I developed a shell-fish allergy. Bummer!
Carols are one of my favourite things about Christmas. We have the Mormon Channel on a lot these past weeks because it has been Christmas Carols 24/7 and no advertising. It sure puts you in a festive mood. Like you, I haven't had carolers come around to the door in a very long time. One year when I was a Young Women's leader at church we all went as a group to all of the shut in member's homes to sing and it was greatly enjoyed. We also used to sing as a church congregation every Christmas at a local Care Home. That hasn't been done in recent years either. The old people always loved it so much. I miss it! Your shrimp recipe looks delicious. I cannot eat shrimp myself, but Todd loves it. Bookmarking it for him for when his appetite will need some extra inducement! Love and hugs! xxoo
