Today is St. Lucia’s Day which is a festival of light celebrated in Swedish homes and schools on one of the darkest days of the year. Her name is derived from Latin , meaning light, so she has become associated with festivals and celebrations of light.
St. Lucia Day is a celebration of hospitality, and teaches the values of sharing and caring.

I think it’s important to know about the customs of other countries. Many of our Ancestors came over to the US from Europe and so their customs are celebrated here too. As far as I know none of mine came from Sweden, but no matter where you go, hospitality and caring for others is important, especially this time of year.
Today’s pictures are repeats as I really don’t have a lot of pictures on my computer anymore. The upgrading that was done over thanksgiving left me with little share. I’ll have to take more in the days ahead so I’ll have some new ones to show you.
Time is marching on and along with packing up and sorting out and Christmas packages to wrap, I’ve little time for picture taking so bear with me in the days ahead.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Ice Cream Day!
We have already had holidays to celebrate ice cream flavors, ice cream cones, ice cream sodas, ice cream sandwiches, and ice cream sundaes. Does ice cream really need an additional day of celebration?Of course it does!There’s no better opportunity than in the midst of the sweet tooth overload that is part of the holiday season. Scoop up some of your favorite holiday flavored ice cream and celebrate Ice Cream Day! Ho Ho Ho.
When the babes were young our dairy sold holiday shaped ice cream. Single servings came prepackaged and they loved them. I’m going to have to check out the grocery store now to see if they still have them. Our favorite ice cream store also had some ice cream cakes that were rolled up to look like a festive Christmas log and were delicious.
It you’d like to try making your own Ice Cream dessert, I found this recipe to try.
Peppermint Ice Cream Brownie Bars
1 box, for 9x13 pan, of your favorite brownie mix
1 cup white chocolate chips
1 container,8 ounces, Cool Whip
3/4 cup heavy cream
8 ounces good quality white chocolate, baking chocolate
1 quart peppermint ice cream
Peppermint Bark, coarsely chopped, for garnish
Prepare brownies according to package instructions Adding in the white chocolate chips to the batter is optional. Set aside and allow to cool.
As brownies are cooling, bring the heavy cream to a boil in a small saucepan. Take off of heat and add the baking chocolate. Stir until well combined and allow to cool for about 5 to 10 minutes. You want it still pourable.
Once the brownies have cooled, top with the white chocolate sauce. Put pan in the freezer for about 20 minutes until the white chocolate has hardened.
Take out of freezer and top with peppermint ice cream. Top the entire thing with cool whip and sprinkle on the peppermint bark garnish.
Continue to freeze for 4-6 hours until the ice cream is fully frozen and the dessert is easy to cut into defined squares.

It is getting that busy time of the month with Christmas looming so close by! I need to get a list together and see what I need to get things "wrapped" up by this weekend :) I do agree, it is interesting to learn about the customs of other countries, especially what traditions they may do around the holidays, etc.

Happy St. Lucy's Day AND Happy Ice Cream Day! We always had some little celebration in high school for St. Lucy's Day although I don't think I ever knew why! I really do like the idea of Ice Cream Day!!
Everything - even stress - goes better with ice cream!
