Today is Worldwide Candle Lighting Day. For hundreds of years, lighting a candle has been a way to show respect for those that have died. This beautiful gesture shows that although someone may be gone from this world, their memory will endure, and the light of their flame will continue to inspire and guide others. Worldwide Candle Lighting Day is a celebration of unity and memory. It’s a day on which people around the world gather to light candles for children who have died and to show that they will always be loved and never forgotten. The candles are lit at the same time in every time zone, meaning that a consistent warm glow passes around the planet for a full 24 hour day. At 7 p.m. local time, people light candles for one hour to remember their loved ones. It is a moving occasion that bypasses geographical and cultural divides.

I’ll be lighting my candle today for a special grandson who left this world way to soon. He’ll always hold a place in my heart, always loved and never forgotten. Of course, nothing will ever make up for the loss of a child, but there is some solace to be taken in the fact that the child’s life was a good one, however short.
We have a 90% chance of snow today so it looks like some snow shoveling may just be in my future. We’ve been fortunate and only had slight dustings of snow up to this point. I won’t be sad at all if that is all we get once again.
The news has been full of accidents happening out in Northeastern Ohio. They’ve received the bulk of snow this week until now. I guess these folks forgot how to drive on winter roads. Take care and be safe all!

Today is Noodle Ring Day
With Christmas so close around the corner, in December it’s easy to overlook some of the most unusual days honoring some of the more unusual foodstuffs. But this time of year is just as good a time as any to learn about noodle rings, and celebrate just how tasty they are!
A noodle ring is, rather predictably, made from noodles, especially the flat egg noodles. It’s made using a ring mold, or a Bundt pan, with ingredients including cheese, eggs, and flour along with the noodles. When it’s pressed out of its tray, you’ve got a thick ring of delicious noodles baked to perfection.
EGG NOODLE RING
1 eight oz. pkg. egg noodles
3/4 c. cream
3 eggs, slightly beaten
fine dry breadcrumbs
Cook noodles in 3 qt. salted water about 10 minutes. Drain, add cream and eggs. Butter a ring mold and dust with crumbs. Pour noodle mixture into mold and set in pan of hot water.
Bake at 350 degrees for 45 minutes. Unmold on hot platter and fill center with creamed pas or creamed tuna.
Makes 6 servings.

It does always seem like there are lots of accidents after the first snowfall or here after it rains. People do forget and need a quick reminder about slippery, icy roads. Stay safe out there! I'll have to try to remember to light a candle tonight at 7 p.m. our time.
