Life is a Special Occasion!

Today is Christmas Day, the biggest holiday of the year. Christmas has both a strong religious and traditional meaning. It has a certain feel, all to itself, that you usually do not feel at any other time of the year. It creates within us, a sense of kindness and concern for fellow man. At no other time are we more generous and giving. It creates a sense of family and belonging.
It is truely a time that comes but once a year. Christmas is celebrated in most countries around the world! So join in celebration of the magic, the wonder and the spirit of this holiday season.

THOUGHT FOR TODAY
I heard the bells on Christmas Day
Their old, familiar carols play,
and wild and sweet
The word repeat
Of peace on earth, good will to men!
Henry Wadsworth Longfellow
HAPPY CHRISTMAS DAY! It’s finally come, the day that we’ve all been preparing to celebrate for weeks now. I thought I'd let you know what I got for Christmas this year. First and foremost I got to spend time with most, but not all of my family. Hopefully I’ll be talking to the others at some point or another today. I did get many wonderful gifts, but most notably or noticeable I got the cold. Sneezing a lot and blowing my nose. I hope it goes away soon. I’m almost out of tissues! Ha!
I usually spend the day at home, but this year DS#5 gave me no choice but to come to dinner at his house so that’s what I hope to do. However, I really don’t want to spread my germs and give them all the gift that I got. You know what comes around goes around and that is especially true when it comes to colds.
I do have some leftover chicken soup in the freezer and it’s supposed to be good for colds so that will be what’s on the table for lunch.
The pictures today are of some of my grandchildren carrying on the family traditions in the kitchen this past week. It’s seems they are all becoming really good cooks! Most are making sausage bread but one granddaughter made noodles the old fashioned way.
I hope you all have a RELAXING Sunday! Merry Christmas!
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It's National Pumpkin Pie Day. It's one of America's favorite pies. Pumpkin pie is steeped in holiday tradition. The peak consumption period for pumpkin pie begins at the fall harvest, and lasts all the way through to the Christmas meal and dessert.
Here at my house we usually only have pumpkin pie for Thanksgiving and I often wonder why. I found this recipe for one that is a little extra special so I thought it might be good to have for Christmas.
PECAN PUMPKIN PIE AND CARAMEL SAUCE
1, 29 oz., can pumpkin pie mix
1, 5 oz, can evaporated milk
3 eggs, lightly beaten
1 c. sugar
1/2 tsp. salt
2 tsp. cinnamon
1 pkg. yellow cake mix, with pudding
1/2 lb. butter, melted & cooled slightly
1 1/2 c. chopped pecans
Preheat oven to 350 degrees. Line 2 nine inch pie pans with waxed paper. Mix together the pumpkin, milk, sugar, eggs, salt and cinnamon. Pour into pans. Sprinkle cake mix over the top. Distribute chopped pecans over cake mix and drizzle melted butter over all.
Bake 1 hour. Chill. Invert and cut into wedges.
CARAMEL SAUCE
2 sticks butter
2 c. light brown sugar
1 c. heavy cream
Cut butter into pieces and melt it in a small, heavy bottomed pan. Stir in the brown sugar and cream. Cook over very low heat, stirring constantly until all is melted and blended. Whisking the sauce helps to bring it together. Serve warm. Drizzle warm sauce over pie wedges.
COUNTING MY GIFTS

PRAYER FOR OUR TROOPS
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU !
ADVICE FOR TODAY
Christmas is forever, not for just one day,
for loving, sharing, giving, are not to put away
like bells and lights and tinsel, in some box upon a shelf.
The good you do for others is good you do yourself.
Norman Wesley Brooks
A little smile, a word of cheer,
A bit of love from someone dear…
MERRY CHRISTMAS !
Love,
ma

So sorry you got a cold for Christmas, Ma. It is the season though for them. My sister would always get a cold at Christmas because she was so busy doing baking that she got herself a bit run down and then got a cold for the big day. Thankfully, by the grace of God, we have been healthy here so far this winter season. I was late in getting my flu shot, got it this past week. I asked the pharmacist if there were any cases of flu here in Arizona and he said not yet and he said the strain in the flu shot was really close to the strain of the flu bug so he was hoping it would be a mild season of flu here.
Enjoyed all the pictures of your grands baking. It is neat to pass down traditions like this!

Hope you are better soon, my friend!
Our son was sick last Christmas and we went spent Christmas morning at the local drug store buying medicine AND tissues for him!
Take care and God bless you! x
Now I'm craving me some sausage bread! I'm going to have to Google that recipe for sure.
Hope your cold takes its leave as quickly as it came! Rest and take good care, m'friend.
