April 14th is Look Up at the Sky Day. Today is a fun day to check out what's up there. 'Ya never know what might be going on up there. An asteroid or meteor may be on it's way. A solar eclipse could be on display. A flock of geese or birds may be over head. Beware, you may need to duck for cover. Or, the clouds may be forming into interesting characters and patterns.
Take a few minutes out from your busy day to look up at the sky today. If nothing else, the break from the routine will be relaxing.

THOUGHT FOR TODAY
I can remember my dad telling me to keep my head up when I was out walking. I was always looking down to see where I was going. I didn’t want to trip on an uneven sidewalk if I didn’t have to. But looking up is for the best. Now as I’m older I still have to remind myself to look up. There is a lot we miss if we don’t.
One of the things I made this past weekend for our family feast was baked beans. I used a slightly different recipe from my usual and thought I’d share it with you all today.
Quick Southern Style Baked Beans
Serves up to 18
8 slices bacon, halved
1 medium onion, cut into small dice
1/2 medium green pepper, cut into small dice
3 large cans (28 ounces each) pork and beans
3/4 cup barbecue sauce
1/2 cup brown sugar
1/4 cup distilled or cider vinegar, I forgot to add this and it was ok
2 teaspoons dry mustard or 2 tablespoons Dijon
Adjust oven rack to lower-middle position and heat oven to 325 degrees. Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels. Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes. Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients). Pour flavored beans into a greased 13 by 9 inch ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
One of the Easter crafty projects that I did this year was to take some old postcards that I found at an antique store and put them into frames which I found at Goodwill for practically nothing. I wish I would have found more postcards then I would have had enough for everyone in the family, but I had only 3 so I’ll save them. Maybe by next year I’ll find more.
I also made some candy bird nests with white almond bark colored with green food coloring, adding some coconut and then placing jelly beans in the middle for bird eggs. Our little Lucky Guy put the jelly beans in the middle for me. It was a fun afternoon activity for both of us. Two of my grand dogs were also right on hand in case anything got dropped down their way too.
The pictures today are a combination of what’s been going on around here. Today it is much quieter around my house but I have some wonderful memories of a great weekend.
PRAYER REQUEST
Prayers have been requested as one of DS#5’s co-workers has lost her battle with cancer. Please join me in praying for her husband and two young children during this difficult time and also for her co-workers, whom are great saddened by her passing.
COUNTING MY GIFTS
I have counted at least 3 things every day that I'm thankful for a little over a year and have now reached 1500 gifts. On my way to 2000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

What a cute idea with the nests, Ma, especially to have the help of your grandson in the construction of them; I remember seeing things like this for Easter gift ideas. Your post card craft too sounded like a cute one. And yum with the baked beans; I'm going to have to copy this recipe and try it when going to a gathering.

I love that kind of baked beans, now I am reminded I could do some for the weekend. Grandson is a cutie for sure. I would like to see your postcards too.

Tonight is the lunar eclipse and blood moon so I'll be looking up around midnight PST if I can stay awake til then... Baked beans are yummy... I was just telling hubby on our walk yesterday that he was missing everything as he was only looking at his feet... we were walking through the orchard and he didn't want to trip... Happy Monday! :)
