It's SUNDAY!
Today is National Find a Rainbow Day
What a wonderful day to celebrate! Rainbows are a gift from nature that enthralls all ages and all nationalities. We stare at the wonder of the almost magical colors that rise up from the ground and arch throughout the sky. No wonder we are fascinated with them and chase rainbows.
The rainbow is one of those natural wonders that has touched the hearts of the world. It gives beauty, hope, and sometimes fear through those that fear it. Legends surrounding the colorful image span the entire globe.
The Irish legend is one of the most famous. Probably because to the listener there is the chance of finding that elusive pot of gold. According to the story, there is a pot of gold hidden at the end of the rain bow that is guarded by a leprechaun. Everyone searching for the end of the rainbow, but usually finds that the little creatures have already spirited it away.
Some of these legends also come from the Bible in which a rainbow was given as a sign after the flood that God would not destroy the entire earth with a flood again. It was a sign of hope and a promise. To many cultures it still holds the same feeling.
The next time you see a rainbow take the time to enjoy its beauty as the sun and moisture in the air meet to give us this wonderful array of beauty
THINKING
We may run, walk, stumble, drive, or fly, but let us never lose sight of the reason for the journey, or miss a chance to see a rainbow on the way.

Look for the rainbow first. The rainbow is a sign of God's promise,
That He will guide us through any storm,
That He will see us through all our troubles,

NEW IN THE KITCHEN
If chocolate is your down fall, you might as well enjoy the trip...
Today is National Chocolate Mousse Day and Chocolate Milk Powder Day.
Here's a recipe for making your own Ice Box Chocolate Syrup. This makes a delightfully refreshing and nourishing drink. Kids love it and so do many grown ups.
2 cups Cocoa
1 qt. water
5 cups sugar
1/4 level tsp. salt, vanilla to flavor. Mix cocoa and sugar together dry. Put salt in water and bring to boiling point, use of a double boiler is recommended. Gradually work in the cocoa-sugar mixture. Bring back to boiling point (stirring constantly to avoid scorching) and boil 2 minutes. Turn off heat. Strain, put in covered container and cool rapidly. Add vanilla when cool. For glass of rich chocolate milk, mix 1 part of chocolate syrup to 10 parts of fresh milk. Excellent for children, for an afternoon snack...convenient, economical, and safe. Excellent as a sauce for ice cream, for chocolate sundaes, for topping mousses, gelatin desserts etc.
And just in case you'd like something to go with that big glass of chocolate milk here is a recipe for Jumbo Quiche Muffins
16.3-oz. tube refrigerated flaky buttermilk biscuits
1/2 c. cream cheese, softened
4 eggs, beaten
1/4 t. seasoned salt
1/4 t. pepper
6 slices bacon, crisply cooked and crumbled
1/2 c. shredded Cheddar cheese
Place each biscuit into a greased jumbo muffin cup; press to form a well. Combine cream cheese, eggs, salt and pepper. Spoon 2 tablespoons of mixture into each biscuit well; sprinkle with bacon and top with cheese. Bake at 375 degrees for 15 minutes, or until golden. Serves 8.
PRAYERS
Dear Lord, Teach us to know that the promise of the rainbow is found, not in cloud free days, but in the midst of the storm. Thank you for all the good things You send into our lives. Thank you for all the terrible things You don't send into our lives. Thank You for the people in our lives who help us to grow closer to You.

Lord, hold our troops in
your loving hands.
Protect them as they protect us.
Bless them and their families for the
selfless acts they perform for us
in our time of need. I ask this in the

It's supposed to rain here...the week ahead looks like it will have plenty of rain too. But we all know that April Showers bring May flowers so I'm just going to be thankful for rain and not snow today.
