ON THE BRIGHT SIDE
APRIL 4th, 2011
If you can't see the bright side of life, polish the dull side
It's MONDAY!
Today is Walk Around Things Day. It is an important day to avoid problems and risks, by simply walking around the potential problem. You wouldn't walk under a ladder, would you? Then, it is also wise to walk around objects, especially those that pose risk or danger.
Walk around things can also be used figuratively. It is also wise to walk around, or avoid, topics issues, and problems that are sticky, may provoke an argument, or are not readily solved.
If ever was a day to Walk Around Things, today is that day.
THINKING
If it takes a lot of words to say what you have in mind, give it more thought.
Dennis Roth
We can point our finger when we see that other people aren't obeying God, but all He wants from us is our own obedience.
NEW IN THE KITCHEN
It's National Cordon Bleu Day
It's a dish that means blue ribbon in French. What is it, you ask? Traditionally, it's Wiener-schnitzel, which sort of means a chicken-fried steak in German, rolled and filled with cheese and ham.
Chicken Cordon Bleu
2 whole chicken breasts, boned and skinned
4 teaspoons dijon mustard
4 slices ham
4 slices swiss cheese
1/2 cup flour
salt
black pepper
1 egg
1 cup seasoned bread crumbs
peanut oil
Cut each chicken breast in half. One at a time, place breast halves between two sheets of waxed paper and pound flat. Spread some mustard down the center of each breast, and then layer with 1 ham slice and 1 cheese slice. Fold breast half around the filling; beginning with one long side, then short sides, finishing with a long side making sure the filling is completely covered.
Season flour with salt and pepper. Beat egg lightly with 1 teaspoon water. Line up a plate with flour, a shallow dish with beaten egg, and a plate with bread crumbs. One by one, roll each piece in flour to coat, then dip in egg, coating completely, and roll in bread crumbs, pressing crumbs into egg coating. Press edges together and roll each piece as it is finished in a sheet of waxed paper. Place chicken pieces on a tray and refrigerate for one hour.
Heat enough peanut oil in a large frying pan so that it comes up half way. Fry chicken pieces, two at a time, in hot oil, until browned evenly on all sides; about 2 minutes each side. Remove from oil, drain on paper towel and place in a non stick baking dish. Bake at 350F degrees for 15 minutes.
Makes 4 servings

AROUND HOME
When cleaning up things around my house, I've discover that I have a lot of shoe boxes. If I put my shoes away without the boxes they take up a lot less room in my closet so I've been looking for a craft idea that I can use empty shoe boxes and I found this idea so I thought I'd post it here. I hope to do this one at the campground with my grandchildren. It won't be long now and the camping season will begin.
Treasure Shoe Box
Decorate an old shoe box and lid with construction paper, markers, paint, glue and glitter, crayons, googly eyes, stickers, lace, doilies, or whatever else you can find. Be sure to put the child's name inside the lid. This box make a great box for treasures found out in the yard, on the way home from school, or anywhere else your children hunt.
COUNTING THE DAYS
Never miss an opportunity to make others happy, even if you have to leave them alone in order to do it

Love your treasure box idea! My grandchildren, when they were younger, loved decorating containers for their "stuff".
Hope you have a good week!
Cordon Bleu. I have the cookery course of 20 volumes. Have had them for about 30 years but can't say they have had as much use as all my other cook books.
