THE BRIGHT SIDE

Decide to be happy today, to live with what is yours – your family, your business, your job, your luck. If you can’t have what you like, maybe you can like what you have.

Just for today, be kind, cheerful, agreeable, responsive, caring, and understanding. Be your best, dress your best, talk softly, and look for the bright side of things. Praise people for what they do and do not criticize them for what they cannot do. If someone does something stupid, forgive and forget. After all, it’s just for one day.

Who knows, it might turn out to be a nice day.

THE BRIGHT SIDE

I'm looking out the window
and the day is drab and dreary,
And I'm trying to console myself
by thinking something cheery
I know it's simply horrible
to get in such a slump
And I also know it's up to me
to get across the hump
And I realize I'm selfish
to mention this to you
For, gee, you might be feeling
a little 'low-down' too
but often when I feel like this
I tell myself it's true
That I am not the only one
who feels 'low-down and blue'
And just knowing there are others
who feel the way I do
Renews my sinking spirit
and keeps me smiling through
and know that it's natural
to take a 'spirit-dive'
Provides the spunk and courage
to hang on and survive
And while there are a lot of moods
that we can drive away
by looking on the BRIGHT SIDE
in all we do and say,
There also is a loneliness
that God meant us to feel
But, gee, it sure is mighty hard
to know which one is real
And I'd hate to be a 'sad sack'
who never saw the sun
And just complained that every day
was such a dreary one.
But I know that all the dark days
are just part of God's plan
We should accept them graciously
and do the best we can...
So I'll just keep on trying
for I know it's 'Gospel true'
there never was a cloud so dark
the sun could not shine through!

I send this little letter out each morning to all my family and friends and even to a few people that I've never met. Many of them send it on to others too. So in order to make it available to more people I post the 'brighter side' of the news here each day in this journal.

The letter began as an effort to keep in touch with my family as they are spread out in all directions. My family, friends and God are the most important things in my life.

You'll find quotes, poems and stories and even a few recipes included in this newsletter. I try to find something new each day to share.

In a world that very often publishes only the dark side of things I felt that others would be encouraged to hear about

If you can't see the bright side of life, polish the dull side

It's FRIDAY!

Today is National Letting Go of Stuff Day, a day to free up subconscious space.

This day is really about focusing on who you are, and what you want to change. Its about thinking differently and being better. Its also a great way to measure your personal development progress from one year to the next. Personal development is the single most important factor for learning to let go of stuff, love and forgive your self. Now there is a national day dedicated to this notion.

Whatever it is that’s been grabbing your gut or your psyche, let it go. Just let it go. It’ll be a better day afterwards.

THINKING

No matter what looms ahead, if you can eat today, enjoy the sunlight today, mix good cheer with friends today, enjoy it and bless God for it. Do not look back on happiness - or dream of it in the future. You are only sure of today; do not let yourself be cheated out of it

NEW IN THE KITCHEN

International Waffle Day

This holiday originated in Sweden. It is called Våffeldagen. The holiday coincides with the Feast of the Annunciation. This day was also considered the start of spring in Sweden and Europe. It became a custom for Swedish families to celebrate the two events by making waffles on this day.

Here in North America, waffles are a dense, pressed griddle cake not unlike pancakes. And like pancakes, they often are eaten for breakfast with sweet syrup. But in many parts of the world, waffles have for centuries been sold as a snack by street vendors. Waffles originated during the Middle Ages, with the first waffle irons being made of two flat metal plates attached to wooden handles that needed to be turned over the fire to cook both sides. The irons not only made the waffle pattern we're familiar with, but also included landscapes, or a family's coat of arms. They were also sold from street carts to the public.

Basic Waffle Batter

2 cups all-purpose flour

2 teaspoons baking powder

½ teaspoon salt

4 large eggs, separated

2 tablespoons sugar

2 cups whole milk

4 tablespoons unsalted butter , melted

½ teaspoon vanilla extract

Sift the flour, baking powder and salt into a medium bowl. Set aside.

In a large bowl, whisk together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add the milk, melted butter and vanilla and whisk until just blended… do not over beat the mixture.

In a large bowl, beat the egg whites with a mixer until soft peaks form, about a minute or two. Gently fold in the egg whites into the egg mixture, be very careful not to over mix as this will deflate the egg whites.

Lord. I pray. Make me aware of where I am hanging on to old thoughts of “if only” or 'what if'. Help me to let go, and to remember how you have always carried me through.

AROUND HOME

Gas prices are so high that I can double the value of my car just by filling up

We are all moaning and groaning about the price of gas these days. I am just thankful that since I've retired I don't use half as much as I used to when I had to go back and forth to work every day. I'm always trying to look on the Bright Side of life you know.

The prices have gone up on every thing and probably will never go back to what they used to be. Still we have much to be thankful for everyday. It's Friday and I know plenty of folks that are thankful for the weekend.
