International Waffle Day
This holiday originated in Sweden. It is called VĂ„ffeldagen. The holiday coincides with the Feast of the Annunciation. This day was also considered the start of spring in Sweden and Europe. It became a custom for Swedish families to celebrate the two events by making waffles on this day.
Here in North America, waffles are a dense, pressed griddle cake not unlike pancakes. And like pancakes, they often are eaten for breakfast with sweet syrup. But in many parts of the world, waffles have for centuries been sold as a snack by street vendors. Waffles originated during the Middle Ages, with the first waffle irons being made of two flat metal plates attached to wooden handles that needed to be turned over the fire to cook both sides. The irons not only made the waffle pattern we're familiar with, but also included landscapes, or a family's coat of arms. They were also sold from street carts to the public.
Basic Waffle Batter
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
4 large eggs, separated
2 tablespoons sugar
2 cups whole milk
4 tablespoons unsalted butter , melted
½ teaspoon vanilla extract
Sift the flour, baking powder and salt into a medium bowl. Set aside.
In a large bowl, whisk together the egg yolks and sugar until the sugar is completely dissolved and eggs have turned a pale yellow. Add the milk, melted butter and vanilla and whisk until just blended… do not over beat the mixture.
In a large bowl, beat the egg whites with a mixer until soft peaks form, about a minute or two. Gently fold in the egg whites into the egg mixture, be very careful not to over mix as this will deflate the egg whites.

Had skip over the waffle recipe. It's too tempting. lol My colonoscopy is in a couple of hours. Then I can eat. Hope you have a great Friday and weekend ahead. I know you are enjoying your newly painted room!
And yes, the gas prices, I'm afraid are going to send our nation in a tail spin.
