NEW IN THE KITCHEN
NATIONAL SPANISH PAELLA DAY
Many regard paella as the national dish of Spain. The original recipe, from Valencia, consists of poultry or rabbit, white rice, green vegetables, snails, and seasonings. The original recipe has been modified along the way to include artichokes, sausage and even everyday leftovers.
Chicken Paella
4 ounces chicken breast, cut into 1 inch pieces
1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 clove garlic, minced
2 1/4 cups chicken broth fat free
1 cup parboiled rice
1 teaspoon oregano, dried, crushed
1/2 teaspoon paprika
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/8 teaspoon saffron, ground or turmeric
1 3/4 cup tomatoes, stewed
1 medium sweet red pepper, cut in strips
3/4 cup frozen peas
Remove skin from chicken breast. Rinse and pat dry with paper towels. Cut into bite-sized strips.
In a 10 inch skillet cook chicken strips, in batches, in hot oil for 2 to 3 minutes or till no longer pink. Remove chicken from skillet.
Add onion and garlic to skillet; cook till tender but not brown. Remove skillet from heat. Add broth, uncooked rice, oregano, paprika, salt, pepper and saffron or turmeric. Bring to boiling. Reduce heat. Simmer, covered, about 15 minutes.
Coarsely chop stewed tomatoes and add with their juice to the pan. Add sweet red pepper which has been cut into strips and frozen peas. Cover and simmer about 5 minutes more or until rice is tender.
Stir in cooked chicken. Cook and stir about 1 minute more or till heated through.
Makes 6 servings

We also have a very different kind of celebration going on here today. DD and her hubby are hosting a get together for the campers up on Party Hill. It will be good to see everyone after a long winter of no camping.
It's now only about 3 weeks till the 2011 camping season begins and I sure am hoping it warms up for us. We can't have running water unless it gets above freezing and stays there. Camping without water isn't much fun. I'm very spoiled and like my luxury camping. There really isn't much roughing it at all for me.
In the news Saturday morning I saw that there is going to be a detour beginning Monday and lasting for 75 days for the route that I usually take when going to the campground. I'll have to remember that and take an optional route. They are doing bridgework there and traffic will be detoured about 9 miles around it. The state route is expected to reopen June 11th, but there still may be work to be done on the bridge that could last until September 30th.
