NEW IN THE KITCHEN
Today we're celebrating gazpacho, a chilled vegetable soup made of tomatoes, olive oil, vinegar, stale bread, and other finely chopped veggies.
Light and refreshing, the Spanish dish gazpacho has become popular through Europe and the Americas.
2 1/2 cups reduced-sodium tomato juice
3 tablespoons white vinegar
3 tablespoons olive oil
2 cloves garlic, minced
1/4 teaspoon salt
3 drops hot pepper sauce
4 large tomatoes, chopped and divided
1 medium onion, chopped
1 medium cucumber, peeled, seeded and chopped
1 medium green pepper, chopped
1/4 cup fat-free croutons
In a blender or food processor, combine the tomato juice, vinegar, oil, garlic, salt, hot pepper sauce and half of the tomatoes; cover and process until smooth.
Transfer to a bowl. Add the onion, cucumber, green pepper and remaining tomatoes. Cover and refrigerate for 4 hours or until chilled.
Garnish with croutons.
I'm not so sure why we'd want a chilled soup here where it is so cold right now...I think I'd prefer a hot bowl of vegetable soup right now

AROUND HOME
Sunday was a very quick day here at my house. I did get some painting done on my Christmas Crafts in the afternoon. Then my youngest sister and her hubby dropped by bringing an early Christmas gift with them
They said they wanted me to have it to use in decorating and that way I could be enjoying it all during this Christmas season.
It's really a clever and cute idea as they inserted mini lights in side glass block, then tied with a bow and when lit up it is beautiful. My picture today shows it unlit.
We still have the promise of more snow in the forecast here and more cold weather. Winter isn't here officially but it is here none the less.
COUNTING THE DAYS
Be like the Grinch when he comes to the realization that “Maybe Christmas doesn’t come from a store. Maybe Christmas … perhaps … means a little bit more!” So out with the Grinchiness in our souls to make way for the Christmas season.
