Today is Human Rights Day
Human Rights Day, created by the United Nations, promotes awareness of the importance of Human Rights issues around the world. On this daty in 1948, the UN General Assembly adopted the Universal Declaration of Human Rights. Each year, the United Nations, establishes a new theme for the year. In 2006, the theme is fighting poverty.
Human rights is something we easily take for granted in the United States. Elsewhere, freedom and basic human rights are not a given

Advent is a season of hope, just when we need it most. Lord, the light I choose to let into my life today, is based on my hope in you. It is a small flame but I believe it can dispel a bit more darkness today. It is through us that Christ's light will shine, in the midst of the struggles and cares of our world.

It's Do Something Crazy with Velveeta Day
Chicken Tortilla Soup - like Max and Erma's
1/4 cup butter OR margarine
1/4 cup all-purpose flour
3 cups chicken broth
1 cup milk
8 oz. Velveeta process cheese food - cubed
10 oz. can RoTel tomatoes and chilies
2 cups cooked, shredded chicken
1 tsp. cumin
1 tsp. chili powder
salt and pepper – to taste
flour tortillas – as needed, about 4 - 6
shredded Colby Jack cheese OR Mexican blend cheese – as needed
In a pot, melt butter over medium heat. Stir in flour and cook, stirring often, for 3 minutes.
Slowly whisk in small amounts of chicken broth at a time, then whisk in milk.
Reduce heat to low and stir in Velveeta cubes; stir until melted.
Stir in RoTel, chicken, and spices.
Once soup is heated through, it is ready to serve at this point. However, if you wish to make tortilla strips, it can sit over low heat while they are made. Stir the soup occasionally.
For tortilla strips, cut tortillas into strips and deep-fry in 350 degree vegetable or peanut oil until golden, then drain on cooling racks.
Spoon a ladleful of soup into a bowl, add a handful of shredded cheese, then spoon another ladleful of soup over cheese. Sprinkle tortilla strips over top. Repeat for remaining servings.
Note: I did buy some Texas Toast tortilla strips not long ago and they were good. It saves having to make your own.

God of all people, help us not to label anyone inferior or second-class. Help us overcome our attitudes of superiority and oppression. May we broaden our vision so that plurality and diversity determine who we are: people called and committed to a world united in justice and peace, now and forever.

AROUND HOME
On TV yesterday they said the #1 wish for Christmas this year was for a WHITE Christmas. We should certainly have that unless our weather takes a drastic change. It's been below freezing and snowing for a week now and next week we're to have more of the same only maybe colder...BRRRChill!
I had the joy of watching Mr. Wonderful yesterday even though it was my off week as his other grandma was ill. So we had a nice warm and cosy day indoors.
