It's SUNDAY!

Hay Fever Season begins today and runs today through September 15.

We had a grand time at the Baby Shower for DS#5 and his wife yesterday. It was another hot steamy day in the 90's. But all in all it really turned out nice.

I'm sure now they'll be very busy getting all those nice gifts they got ready for the baby to use. It won't be long at all now till the baby is here.

THINKING

NEW IN THE KITCHEN

Today is National Lemon Meringue Pie Day

I still remember the last time I made a Lemon Meringue Pie. My DDH dearly loved them and one Saturday I spent a few hours making two of them. I'd put them on the counter in the kitchen and left the room only to return an hour later to find that the dog had found them and enjoyed eating them too. After that I decided it was just too much work only to have it all ruined so I never made another.

But I'm sharing the recipe today in case you might like to try one

1 cup white sugar

2 tablespoons all-purpose flour

3 tablespoons cornstarch

1/4 teaspoon salt

1 1/2 cups water

2 lemons, juiced and zested

2 tablespoons butter

4 egg yolks, beaten

1 (9 inch) pie crust, baked

4 egg whites

6 tablespoons white sugar

Preheat oven to 350 degrees F (175 degrees C).

To Make Lemon Filling: In a medium saucepan, whisk together 1 cup sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest. Cook over medium-high heat, stirring frequently, until mixture comes to a boil. Stir in butter. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture. Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat. Pour filling into baked pastry shell.

To Make Meringue: In a large glass or metal bowl, whip egg whites until foamy. Add sugar gradually, and continue to whip until stiff peaks form. Spread meringue over pie, sealing the edges at the crust.

Bake in preheated oven for 10 minutes, or until meringue is golden brown.

Dear God, Bless All Mothers...

In this intense nine months, when mothers-to-be are realizing that their life is about to change forever, bless them God, because they feel alternately elated and alarmed. Help each mother-in-waiting to understand that she has been carefully chosen, by both you and by her baby, to guide it through its early years on planet Earth. Let her know that she will never be alone in the process. Help her to remember that her baby is your own perfect creation, just as she, herself, is your own perfect creation. Thank you God, for making each of your creations uniquely perfect in its own way

our troops and HIS wisdom for their

commanders.

Lord, hold our troops in

your loving hands.

Protect them as they protect us.

Bless them and their families for the

selfless acts they perform for us

in our time of need. I ask this in the

name of Jesus, our Lord and Savior.

AROUND HOME

After the shower yesterday we returned to the camp ground only to find out it had really showered here big time. Thankfully, our friends that camp nearby has secured everything as much as they could for us. I guess the winds were pretty strong.

The evening turned out nice though and we managed to sit around the campfire for awhile. It was a good ending to a great day!

FAMILY

Not all of my family was able to attend yesterday, but there were quite a few of them. And of course there were a lot of friends there that we've known for ages who really seem like part of the family too.

It's just wonderful to be able to celebrate these special family times all together!
