Life is a Special Occasion!
Today is National Peanut Butter and Jelly Day. We celebrate the 'PB and J' sandwich. Its the favorite lunchtime sandwich of American kids, and many adults, too. Some kids practically live on Peanut Butter and Jelly sandwiches. Did you know that the average American consumes 1,500 peanut butter and jelly sandwiches by the age of 18.
To celebrate National Peanut Butter and Jelly Day, make this iconic American sandwich for lunch!

THOUGHT FOR TODAY
Too few people understand a really good sandwich.
In keeping with the theme for today I’m sharing a new recipe with you all.
Peanut Butter & Jelly Squares
1 cup, 2 sticks, butter, room temperature, plus more for pan
3 cups all purpose flour, plus more for pan
1 1/2 cups sugar
2 large eggs
2 1/2 cups smooth peanut butter
1 1/2 teaspoons salt
1 teaspoon baking powder
1 teaspoon pure vanilla extract
1 1/2 cups strawberry jam, or other flavor
2/3 cup salted peanuts, roughly chopped
Heat oven to 350 degrees. Grease a 9 by 13 inch pan with butter, and line the bottom with parchment paper.
Grease the parchment, and coat inside of pan with flour; set aside. Place butter and sugar in the bowl of a electric mixer. Beat on medium high speed until fluffy, about 2 minutes. On medium speed, add eggs and peanut butter; beat until combined, about 2 minutes.
Whisk together salt, baking powder, and flour. Add to bowl of mixer on low speed; combine. Add vanilla. Transfer two thirds of mixture to prepared pan; spread evenly with offset spatula. Using offset spatula, spread jam on top of peanut butter mixture. Dollop remaining third of peanut butter mixture on top of jam.
Sprinkle with peanuts.
Bake until golden, about 45 minutes. Transfer to a wire rack to cool; cut into about thirty six 1 1/2 by 2 inch pieces.
Peanut butter and Jelly have always been staples here at my house. The kids always ate plenty of PB&J sandwiches, and I still do.
Today is also Holy Thursday when we commemorate the Last Supper. Holy Thursday is sometimes called Maundy Thursday because it was on this day that Christ gave us the new commandment, the new mandate, to love one another as He loves us.
One of the things I love to do on special days like today is to look up in Scripture the details of why we are celebrating, or commemorating, the day. So today I’ll be spending some wonderful, quiet time in God’s Word looking up the events of the Last Supper in each of the four Gospels. 'Love one another' is our mandate for this day. To take care of one another in remembrance of our Lord.
