Today is National Peanut Butter Day which celebrates this very popular household food. Peanut butter was invented by George Bayle, a St. Louis snack food maker during the 1890’s. For many years peanut butter manufactures struggled with the oil separating from the grainy solids. In 1923 Heinz became the first company to homogenize the peanuts into the spreadable butter we know and love today. After perfecting the recipe, peanut butter soon became a classic American food.
The average person consumes more than 6 pounds of peanut products each year. It takes 550 peanuts to make a 12 oz. jar of peanut butter. Peanuts are cholesterol free and an excellent source of Protein. In fact it's the high protein content that causes it to stick to the roof of your mouth.
To celebrate today, bake some peanut butter cookies, spread some peanut butter on toast or enjoy a spoonful right out of the jar!

I do love peanut butter and just about anything you can make with it. I have a peanut butter sandwich often and like it spread on my toasted English muffins too. Peanut butter cookies are a favorite of mine, especially if they are homemade. I’ve also had peanut butter pie and it is delicious!
Today is my day to shop and I made a new menu for next week that I do my grocery shopping from.
On the menu for next week is:
Monday - Broccoli Cheddar Soup
Wednesday - Creamy Rotisserie Chicken Noodle Casserole
Friday - Toaster Oven Quesadillas
Weekend - Ham and Potato Casserole
On the menu for today is:
Savory Turkey Pot Pies
Makes 8 servings
1 onion, chopped
1/4 cup flour
3 cups chicken stock
3 cups cubed cooked turkey breast
2 packages frozen peas and carrots
2 red potatoes, cooked and cubed
3 Tbsp minced fresh parsley
1 Tbsp. minced fresh thyme
1/4 tsp pepper
1 sheet refrigerated pie crust
Additional fresh parsley, optional.
1 egg
1 tsp. water
In a dutch oven coated with cooking spray, saute onion until tender. In a small bowl, whisk flour and stock until smooth, gradually stir into Dutch oven. Bring to a boil; cook and stir 2 minutes or until thickened.
Add turkey, peas and carrots potatoes, parsley, thyme, and pepper; stir gently.
Preheat oven to 425 degrees. Divide turkey into 2 small pie pans, On a lightly floured surface unroll pie curst. Cut it into 2 pie pan sized circles. Place over turkey mixture in the pans. Beat egg and water to brush over pie crust tops. Bake until crusts are golden brown
I will only be making 1/2 the recipe as one pie is enough for just me. It is a warm delicious meal to have on a cold and rainy day. I’ll be having some with cranberry sauce on the side for dinner tonight.
I could have made the full recipe and frozen one. But right now I’m try to empty, not add, to what is in the freezer.
It is a rainy day here and I’m hoping to get out and back between the showers.
It’s supposed to get in the upper 40’s here so not a bad day to get outside.

Peanut butter is good and good for you too!
I agree with you I LOVE PEANUT BUTTER. And I am glad it is not 'too' bad for you. lol
JIF X-crunchy has been my BFF for years! In fact, I used to travel with it. My favorite way is to eat it right off a large spoon. (Even better if the spoon has sat in the freezer first.)
I'm just about out of ideas for winter comfort meals, so I look forward to reading your chicken noodle casserole how-to!
Yes that P-nut butter is an all round food. I guess one of the most accepted across the board. Certainly a quick easy sandwich. I love plain pnut butter and crackers. Either stor bought or made at home. Love it.
