Hallmark!
Today is Bittersweet Chocolate Day which celebrates chocolate in a sweetened form of dark chocolate made from cocoa liquor, sugar, cocoa butter and vanilla. Unlike white chocolate, it does not contain any milk solids. According to FDA standards, bittersweet chocolate must contain at least 35 percent chocolate liquor, which is non alcoholic product produced from cocoa beans.
Consuming bittersweet chocolate on a daily basis is actually quite good for you. All variations of dark chocolate contain antioxidants that lower blood pressure and help protect your heart.
To celebrate today, treat yourself to a few pieces of your favorite variety. Enjoy!
If you cannot see the bright side, polish the dull side
THOUGHT FOR TODAY
I love nothing more than a good, rich, dark chocolate. It exhilarates. It satisfies.
Abigail Spencer
Dark chocolate is a favorite of mine and I have some every day. It is very good for you. It improves your mood and helps you to be healthier.
I had some very good news from my daughter yesterday, she said they have accepted an offer on their house here. It will take time for everything to go through but in about 30 days they should be closing the deal and then they can buy a house in Texas. They didn’t want two mortgages to pay for so they had to wait for it to be sold.
They found a house there that they really like and made an offer on it, pending on the sale of their house. She was overjoyed that things are moving along. She said it would take awhile after that for them to be able to move in and get the house ready for me for me to move, but everything should be ready so I’ll be there before the 1st of April.
I have so much to do here, getting rid of things, that it will be time I can use to get it all done. I finally have a date I can look forward to and will use my time wisely between now and then.
Meanwhile it’s my day to do grocery shopping and I made up a menu for next week to shop from.
Monday - Ham and Broccoli Topped Baked Potato
Wednesday - Savory Turkey Pot Pies
Friday - French Onion Grilled Cheese
Weekend- Turkey Meat Loaf
On the menu for today is
Hamburger Casserole
makes 10 servings
2lbs lean ground beef
4 lbs. potatoes peeled and sliced 1/4 inch thick
1 onion, sliced
1/2 tsp pepper
1 tsp beef bouillon granolas
1 cup boiling water
1 can, 28 oz. , diced tomatoes, undrained
Minced fresh parsley, optional
In a Dutch oven, layer half each of the meat, potatoes and onion. Sprinkle with half of pepper. Repeat layers. Desolve bouillon in the boiling water, pour over all. Top with tomatoes. Cover and cook over medium heat until potatoes are tender, about 45 minutes. If desired, garnish with parsley to serve.
one serving equals 1 cup
I will be using cauliflower rather than potatoes in mine, you could also use egg plant slices. The cooking time will also be need to reduced. It wont take as long for the cauliflower to get tender.
This recipe is easy and quick to make. It is a new recipe for me, but sounds very good.
I cannot eat potatoes like I used to do so often have cauliflower instead. It is a big recipe great for a family or to take to a potluck. So I will cut it in half for just me.
It’s to be cold, windy with a chance of snow showers today. I’m hoping to get out and back before it gets snowy out.
I hope you all have a WONDERFUL Wednesday!

Congratulations to your DD and family on the sale of their home! Exciting days ahead!
I don't mind cauliflower v. potatoes -- but if I'm making a dish for company I'll use 000Flavor Mashed Potato Flavor Liquid Concentrate.
Okay so you have a date or a goal in mind - I am happy for you.
I love dark chocolate too!
