Today is Three Kings Day which is also known as Epiphany. Epiphany is a Christian holiday that commemorates the biblical story known as the Wise Men or Magi, who followed the bright star of Bethlehem to bring gifts to the Christ child.
Traditionally in Latin America, children dress up in king costumes and go door to door in the neighborhoods singing carols in the days leading up to Three Kings Day. In Argentina , sweet wine , fruit and milk are left outside for the three kings and their camels to enjoy. In France people eat Galette Des Rois, or king cake which has a trinket or bean baked hidden inside it. The person who has the piece of cake with the trinket becomes king for the day.
Threes Kings day always falls at the end of Christmastide - also known as the Twelve Days of Christmas. Traditionally, this is the day when all Christmas trees and decorations are taken Down.
Celebrate today and take your decorations and Christmas trees down.

Today, is the day for me to take the decorations down and put the tree away. I’ll need help once again from DS#5 to do this.
I can no longer lift the totes and put them in the storage shed. I always get my Valentines Decorations out immediately following today. The house always looks terribly blah when the decorations for Christmas are put away. I started this years ago and continue to do so. We have several January birthdays in the family and I like the house to look good. I have table clothes and throws for the chair and couch for this season too. You may think it’s way to early, but I don’t. I need some color in my life right now. Outside everything is either grey or white. The days are bleak.
Once again, it’s time for me to cook for the weekend and on the menu is:
Fork Tender Pot Roast
Makes 8 servings
2 to 3 lb. boneless beef chuck pot roast
1 Tbsp olive oil
1 cup coarsely chopped carrot
2 stalks celery cut into 1 inch pieces
1 cup coarsley chopped onion
1 clove garlic minced
1 bay leaf
3/4 cup beef broth
1/4 cup dry red wine
2 Tbsp. quick cooking tapioca, crushed
1 Tbsp. dried Italian seasoning, crushed
1 Tbsp. tomato Paste
1 tsp garlic powder
3/4 tsp ground black pepper
1/2 tsp dry mustard
1/2 tsp. paprika
4 cups mashed potatoes, optional.
In a large skillet, brown meat on all sides in hot oil over medium high heat. Remove from heat and set aside.
In a slow cooker, combine carrot, celery, onion, garlic and bay leaf. Top with meat.
In a bowl combine broth, wine, tapioca , Italian Seasoning, tomato paste, garlic powder, pepper, dry mustard and paprika. Pour over meat in cooker.
Cover and cook on low heat setting about 10 hours or on high setting for 5 to 6 hours.
To serve, transfer meat to a platter. Remove vegetables with a slotted spoon. Remove and discard bay leaf. Skim any fat from sauce; drizzle sauce over meat and vegetables. If desired serve with Mashed potatoes. I’ll be having mine with mashed cauliflower.
I didn’t have tapioca so I used some cornstarch instead. Both are thickeners.
Some like their roast beef with horseradish on the side, I like mine with ketchup.
It’s a cloudy day with snow showers expected today. We’re in the mid 30’s and it’s cold out. but we aren’t expecting to get much snow accumulation, only about an inch or two.

Uh-oh, I was thinking the Epiphany wasn't u.)ntil tomorrow! (I never heard it called 3 Kings Day until I met Tom, and that's what he was taught while in school.) Like you, I dread how stark and gloomy our home will feel without the twinkling lights. I don't decorate for Valentine's, so I'd better put on my thinking cap!
I made a Mississippi Pot Roast last Sunday, so there's other recipes waiting in line. Nevertheless, I like your version and will be trying that. For some reason, every time I try and do carrots -- whether its in the slow cooker or InstaPot -- it takes forever to get them soft. Do you start yours before the other veggies? Thanks!

I put away most of my snow people, but I've still got some of them in the living room. I think tomorrow is the day they all get put away. I'm going to cook some chicken in the crock pot with tomato and chili powder. Snowy and cold winter days are the my favorite times to cook. Take care!
