Today is National Popcorn Day which celebrates one of the most popular snacks in the country. Americans eat about 16 billion quarts of popcorn each year, which make it about 51 quarts per person each year.
Popcorn has been around for centuries and is one of the oldest snacks in the country. It is one of six main varieties of corn, such as pod, sweet, flour, dent and flint. Popcorn eventually made its way to the United States. In 1948, archaeologist in the state of New Mexico discovered popcorn ears that were at least 5,600 years old. The Native Americans in both South and North America popped their corn by throwing it on hot stones over a fire.
Today, popcorn is a common household snack that is enjoyed by many.
To celebrate today, make your favorite kind of popcorn and enjoy it while watching a movie at home.

I cannot eat salted popcorn, but otherwise have it often here. I used to make my own, but lately I’ve been buying Skinny Pop Popcorn. It is prepopped and comes in a bag. It comes in different flavors but I’ve been eating the plain one. I’m truly getting lazier and lazier.
For years now I’ve been buying Boy Scout Popcorn which they sell every year. Normally one container of it lasts me about a year. This year I didn’t finish the one I had and still got another one. It’s the best popcorn I’ve ever had. It pops every kernel in the pan.
I also have an air blower popcorn maker that makes popcorn without using any oil which is healthier for us. Now it’s just sitting there waiting to be used. Yet another thing I’ll be giving away.
I also still have a few bags of microwave popcorn. One of my grandsons made some when he was here last Sunday and it popped up just fine, so it’s not that old. But I no longer eat it because of the salt content.
It seems I can never watch a movie without eating popcorn. Those two always go together for me. And I’ve been watching a lot of movies lately.
I’ll be cooking today and on the menu is:
The Best Tuna Salad Recipe for Sandwiches
Makes 2 servings
1 15 oz. can no salt light tuna in water, drained
1/2 cup finely chopped apple
2 Tbsp. finely chopped red onion
3 Tbsp. Plain yogurt, such as Greek style
1 Tbsp. finely chopped herbs such as parsley, dill or chives.
1 tsp. lemon juice
pinch of ground pepper
Combine tuna apple, celery, onion, yogurt, lemon juice , and pepper in a bowl.
Spread between two slices of whole Wheat bread.
I don’t have any plain yogurt, and will add mayonaise instead. The only fresh herb I have on hand is parsley so I will chop that up and add it to the mix.
You could also make this into a Waldorf tuna salad by adding some walnuts and grapes that have been halved.
Tuna is supposed to be very good for us. So this a healthy recipe for me to eat.
Snow is expected today but we’ll only be seeing about 3 to 5 inches. Thankfully we are not seeing much here, but other places in Ohio are a lot worse. If you are traveling today, slow down and be safe.
On the calendar I see it is also one of nieces birthday, so I'm sending birthday wishes her way today!

Enjoy some popcorn today, it is one of the most popular snacks to eat!
I've been thinking of making popcorn for supper for several nights now! Love the silicone one I bought at a Pampered Chef party b/c there's no awful chemicals like you get in those microwave bags. So easy to collapse and store!
I'd like to say I don't add butter or salt, but that's so hard. I try to remember and use a little olive oil and garlic powder instead.

I always think about popcorn - but not when I want to eat it. I have it. I do it in bags because I only eat it once or twice a year!
Sherry has pop corn most nights. We buy it in the Skinny girl individual sizes. But the air popper sounds good, we might just come up and get it when you give it away. LOL Probably not ;( not going too far anymore. I see you have some snow.....
