Today is St. Nicholas Day which commemorates the early Christian Bishop who became best known as Santa Claus.
Traditionally people around the world will celebrate with gift giving, stories and a feast in honor of the occasion.
It’s a good day to gather your family to write letters to Old St. Nick or invite friends to a Santa themed dinner.
St. Nicholas was born in Patara, Lycia, part of modern day Turkey, and died on December 6th in the year 343 AD . He became known as the patron saint of children and a generous bringer of gifts. His day was widely celebrated in Europe from 1200 to 1500.
The legend and name of St. Nicholas evolved over hundreds of years from the Dutch Sint Nikolaas to Sinterklaas to Santa Clause as we know him today.
To celebrate today, write your letter to Santa Claus. Let him know if you’ve been naughty or nice.

The stockings were hung by the fire with care, In hopes that St. Nicholas soon would be there.

For years it was a tradition at our house, for the children to set out thier shoes out the night before and on The feast of Saint Nicholas, their shoes would be filled with little toys or treats from St. Nicholas.
They wouldn’t get the big gifts which they would get at Christmas, it was only small treats or toys like candy and perhaps a small toy car or top to spin.
I’ve got my stocking hung by the fire but I doubt there will be anything in it. I’ve been naughty this year.
This is my day to cook and make my menu for next week to do my shopping from. I’m trying to use what I have on hand and won’t need much in the way of groceries for next week.
The menu for next week is as follows:
Monday - Quick and Healthy Veggie Soup
Wednesday-Italian Turkey Meatballs
Friday - Baked Manicotti
Weekend - Apple Cider Chicken
On the menu for today is:
Roasted Sausage. Potatoes and Peppers
Makes 2 servings
2 potatoes peeled and cut into 1 inch cubes.
1 orange and 1 red pepper sliced
1 onion, chopped
4 garlic cloves, minced
1 Tbsp.olive oil
2 tsp paprika
1/2 tsp dried thyme
1/2 tsp pepper
1, 19oz package Sausage cut into 1 inch pieces.
Note: I had only Turkey Smoked Sausage on hand so that is what I will use. You could also use Italian Sausage links.
Minced fresh thyme, optional
Preheat oven to 400 degrees and place the potatoes, peppers, onion and garlic on a greased baking pan. Sprinkle with seasonings, toss to coat. Spread evenly over pan leaving room for the sausage. Add sausage to the pan.
Bake uncovered until a thermometer inserted in sausage reads 160 degrees and vegetables are tender. If desired sprinkle with fresh thyme before serving.
I didn’t use as many potatoes as called for in the original recipe. I choose to do only 2 but you could use more to feed more people. Figure 1 potato per person.
I don’t have my luncheon to go today and instead will go to the store to do my grocery shopping . The lunch is next week. Our mix of snow and rain will be changing over to rain only today and we may see a peak of sunshine. It’s to be above freezing. so it won’t be too bad out.

Oh, I find it hard to believe you were a naughty girl this year!
So ... if you and I both get coal in our stockings, perhaps we can find someone with a grill and BBQ something yummy.
