Today is National Fruitcake Day which celebrates a delicious treat for the holidays. They are possibly the most popular item for regifting. A whopping 38 percent of people say they give the fruitcakes away when they receive them.
Never the less fruitcakes have remained popular for thousands of years. The Ancient Egyptians buried thier loved ones with fruitcakes because they believed it was essential for the journey to afterlife. The Crusaders were known for eating fruitcakes during their campaigns . The small cakes could withstand long journeys without spoiling and were full of nutritious fruits and nuts.
To celebrate today, pick up one of these holiday treats from the grocery store and enjoy a slice or two.

I am one who happens to love fruitcake. My parents would get them for gifts at the holidays, but I buy my own. My mother even tried making some of her own, but would use canned fruit and not the dried fruit we see in it at the stores. We enjoyed it but it was quite different.
I haven’t seen any at the stores I shop at so I’m hoping to find one at the after Christmas sales.
It’s my day to cook up something new. My many leftovers are now slim pickings.
Smoked Tuna Spread Canapes
Some would serve these as an appetizer, but I’m making it a main dish for me today.
Makes 6 servings or 24 canapés.
3 oz. cream cheese, softened
1 finely chopped red onion
2 Tbsp. snipped fresh chives, divided
2 tsp. olive oil
1 tsp. Old Bay seasoning
1/2 tsp. Worcestershire sauce
1/2 tsp liquid smoke
1 can chunk white tuna, drained
24 almond crackers
1/2 an English cucumber, cut into 24 thin slices, about 1/4 inch thick.
Stir cream cheese, onion , chives oil and Old Bay, Worcestershire sauce and liquid smoke in a bowl until creamy
Flake tuna with a fork and add to the cream cheese mixture. Stir until well mixed. Cover and chill for at least an hour.
To assemble, spread 1/2 tsp of tuna mixture on each cracker. Top with a cucumber slice and 1 1/2 tsp. tuna mixture on each. Top all with a Tbsp. chives.
I don’t have a cucumber, so will omit that from my recipe.

Monday - Chicken and Spinach Soup with Fresh Pesto
Wednesday - Hamburger Casserole
Friday - Tilapia with citrus Sauce
Weekend -Beef and Rice stuffed Cabbage
I don’t need many groceries this week so will go to Target as I do have to get my bottled Dasani water

Come to think of it, I've not seen any fruitcakes this year. I only remember my parents getting one such cake in the 50's. One taste of the dried fruit pieces and I was like "Nooooo!" Pretty sure it didn't contain any alcohol; maybe that would have made it more palatable? Ha.
Has there been any more updates on your and DD's big move?
Enjoyed the read and the pictures. I have never been a real fan of Fruit cake, but I do like to eat a piece every once in awhile, mostly on holiday.
