Today is Go Caroling Day which celebrates Christmas carols which are a song whose lyrics are on the theme of Christmas or the winter season itself and which you usually sing in the period surrounding the holiday.
Christmas carols and songs written in the United States range from Jingle Bells and O Little Town of Bethlehem to Away in a Manger and numerous others of varying genres,
If you cannot see the bright side, polish the dull side
THOUGHT FOR TODAY
Christmas is more than a time of music, merriment and mirth; it is a season of meditation, mangers and miracles. Christ is more than a time of carols and candy, it is a season of dedication and decision.
There was a time in my past that Christmas carolers would go from house to house singing carols for the people that lived there. My family would sing carols more when they were younger. But I listen to Christmas music and sing along with the songs. Some are funny and some are deeply religious. All of them are good!
When my boys were in Scouting, we’d visit nursing homes and sing carols to the people there. They were so happy to see the children and listen to their songs.
I have some wonderful memories of those times.

It’s to be Partly sunny and 45 degrees so it will be a great day to get out and shop and on today’s menu is
Chicken and Mushroom Shepherds Pie
Makes 6 servings
Topping:
2 lbs Yukon Gold potatoes, peeled and cut into 1 inch chunks
1/2 cup milk
2 Tbsp. Olive oil
Filling
2 Tbsp. olive oil
8 oz mushrooms halved and sliced
1 cup chopped onion
1/4 tsp dried thyme
1/2 cup dry sherry
1 1/2 cups chicken broth
3 Tbsp. flour
2 cups cubed cooked chicken
1 cup peas and carrots
1/8 tsp. ground pepper
Prepare topping . Place potatoes in a large saucepan and cook until tender. Drain potatoes, Add milk, 2 Tbsp. oil and mash .
Preheat oven to 400 degrees. Coat a baking dish with cooking spray.
To prepare filling. Heat oil in a large nonstick skillet over medium high heat. Add mushrooms, onion, thyme and cook until mushrooms are starting to brown. Pour in sherry and cook until almost evaporated. Whisk broth and flour in a bowl. Add to pan and cook stirring until thickened. Stir in chicken and peas and carrots and remaining pepper, Cook stirring for a minute. Transfer to prepared baking dish. Spread the mashed potatoes on top.
Bake until potatoes are browned in spots and the filling is bubbling. About 35 minutes.
This is a good way to use up leftover chicken and it’s tasty and delicious.

Your menu looks so good. I saw and heard carolers while I was walking in the neighborhood. What a fun treat for the season.
I love the idea of children caroling at nursing homes! I'll bet the joy was mutual!
Now I want to make this 'pie' for supper, but will have to wait a few days until all the leftovers are consumed.
Amazing how many wonderful traditions have bit the dust. That is in the areas we travel, caroling as I remember it is GONE. We used to just randomly wander (it appeared) and sing in neighborhoods. not so now..
Anyway you sure brought back memories
