Today is National Pearl Harbor Remembrance Day which commemorates the fallen U.S. citizens who were killed in the Japanese surprise attack on Pearl Harbor in Hawaii. The attack occurred on December 7th, 1941 and resulted in our entrance into WWII. President Roosevelt described the attack as a date which will live in infamy.
The USS Arizona Memorial at Pearl Harbor is one of the most visited places in Hawaii. Millions of people from across the world pay visit to this historical memorial each year.
2,403 Americans died and 1,178 were wounded on December 7, 1941, and we remember this fateful event that ;played a pivotal role in U.S. history.
To celebrate today, take a moment to remember the dead and wounded in Pearl Harbor.

Pearl Harbor remains a symbol of American resilience and resolve, and we pray for all those that have served and continue to serve in our military. May we never forget thier bravery and sacrifice.

I don’t know anyone who was at Pearl Harbor in 1941, but I did have uncles that served in the Pacific during the war. One didn’t make it home, the others did.
My dad served in the Army in 1941, but he was on the Atlantic side, in Europe. He was severely wounded and took quite a while to recover and come home. No war is good in my books, there is too much death and damage done as far as I’m concerned. I am proud of all who served and am thankful for the ones that returned home. May we never forget those who died for our freedom.
It has been a busy week here at my house getting things ready to move. I’m thankful too for all the help I’ve had. My daughter has also been packing all their things as they plan to move right after Christmas. This may be our last Christmas with our Ohio family. Her house is for sale and they have had some come to look at it but so far it has not sold. They need a sale so they can buy a home in Texas, which is where we are moving to. I won’t move until they find a house, so will remain here until then. They are only taking personal belongings and buying new furniture when they have a house. Meanwhile, they will stay with my son who lives in Texas and store their belongings until they have a house.
It’s my day to cook here and on the menu is Baked Manicotti:
Makes 7 servings
1 carton ricotta cheese
1 small onion chopped
1 egg slightly beaten
2 Tbsp. minced fresh parsley
1/2 tsp pepper
1 cup shredded mozzarella Cheese. divided
1 cup grated Parmasan cheese, divided
4 cups marinara sauce
1/2 cup water
1 pkg.8 oz. manicotti shells
Additional fresh minced parsley, optional.
Preheat oven to 350 degrees. In a small bowl, mix the first 5 ingredients; stir in 1/2 cup mozzarella and 1/2 cup Parmesan cheese. In another bowl mix the marinara sauce and water, spread 3/4 cup sauce onto the bottom of a baking dish coated with cooking spray. Fill uncooked manicotti shells with ricotta mixture; arrange over sauce. Top with remaining sauce.
Bake covered, until pasta is tender, about 50 minutes. Sprinkle with remaining 1/2 cup mozzarella and 1/2 cup Parmesan cheese. Bake uncovered until cheese is melted, 10 to 15 minutes longer. If desired top with additional parsley,
As this is a large recipe for me I will make only 1/2 of the recipe. This will be more than enough for me.
I always use cottage cheese instead of ricotta, as I keep it on hand in the fridge.
Cannelioni is a great substitute for manicotti. They’re both large tube shaped pastas, ideal for filling. Manicotti noodles are ridged, while cannelloni are smooth.
One serving equals 2 stuffed manicotti.
I will have mine with a side salad.
Today we have warmed up, in the 40’s and it will be a good day to get out of the house. I have a few errands to run, so I’ll do them today. Tomorrow will even be better, with temps in the 50’s.

I was almost 3 yrs old. At times I think I remember, but probably because I remember HEARING all the stories. But I do remember months later when my brothers left home and signed up to serve. Thagt was such a horrible time for our country. WHAT an awakening!!

My parents had just gotten married Nov. 22, 1941 and my dad was called to war.
I do remember from studies Pearl Harbor Day.
Never forget Pearl Harbor! I so hate that our flag holder is broken; my father would never have let this day pass without flying our nation's colors.
Wow, your big move is happening so quickly! This will be a Christmas you'll never forget, for sure. Just imagine how Christmas will look one year from today!
