Hallmark!
Today is Date Nut Bread Day which celebrates the perfect dish for the holiday season. It is delicious, healthy and easy to make.
The first date nut bread recipe appeared in print in 1939, but dates are one of the worlds oldest fruits. Date seeds have been found in excavations of sub tripical areas around the world. Historians believe that the ancient Moors brought dates to Sprain and later introduced them to America.
Dates are notorious for their high sugar count, so it’s no surprise that most date nut bread recipes do not call for additional sweetners.
Celebrate today and try your hand at baking a home made loaf of this festive Christmas treat. Don’t forget to top it off with a little cream cheese frosting.
If you cannot see the bright side, polish the dull side
THOUGHT FOR TODAY
Everybody needs beauty as well as bread, places to play in and pray in, where nature may heal and give strength to body and soul.
John Muir
I’ve never made date nut bread but I have a recipe for date nut cookies that was given to me by mom. She used to make them at Christmas.
Now, due to my diet I don’t make them anymore.
I am baking today however, as I promised one of my
granddaughters Christmas brownies.
Tomorrow is our family Christmas gathering at DS#6’s house. DS#5 will be giving me a ride and I think all of my Ohio family will be there except for DS#3 and his family. They are sick right now and I’m praying they’ll soon be better and can enjoy the rest of the holiday season.
I’m also taking a ham that I’m cooking in the slow cooker. It is a precooked ham, so all it really needs is warming up.
I like to decorate my Christmas ham with a few cloves and Pineapple slices with cherries in the middle of them.
For tonight’s dinner I’m making:
Mini Crustless Caramelized Onion and Cheese Quiches
Makes 36 servings
2 Tbsp. canola oil
2 sweet onions, halved and sliced 1/4 inch thick
1 Tbsp. water, as needed
5 large eggs
1 1/3 cup half and half
1/8 tsp. white pepper
1 cup finely shredded Cheddar cheese
1/2 cup chopped walnuts or pecans, toasted
2 tsp. finely chopped parsley
Heat oil in a pot over medium heat. Add onion and stir to coat. Reduce heat to low and cook covered for 5 minutes. Remove the lid and stir. Cook uncovered until the onions are a deep amber brown. 35 minutes more. Add 1 Tbsp water to deglaze pan, then use a spatula to scrape all that flavor back to your onion. Transfer caramelized onions to a bowl and let cool to room temperature.
Preheat oven to 375. Coat two 24 cup mini muffin tins with cooking spray.
Whisk eggs, half and half and pepper in a bowl. Combine onion, cheese, nuts if using and parsley in a another bowl. Add the onion mixture to the egg mixture, whisk to combine. Working quickly, spoon mixture into the into the prepared muffin cups, filling about 3/4 full. Every so often, give the mixture a stir to ensure the ingredients are evenly staying distributed.
Bake, until a knife inserted in the center comes out completely clean. About 20 minutes. Immediately invert the muffin tins to transfer mini quiches on to a baking sheet. Let cool on a sheet pan to room temperature. 15 minutes.
You can keep quiches in the refrigerate for 3 days or freeze them in a freezer bag for 2 months.
I didn’t have mini muffin pans so used the regular size. They are bigger so make fewer quiches. I often eat breakfast for dinner and these sound delicious. The pictures today are of different types of bread, none of which are date nut.
I also wanted to say thank you to my Sister and BIl who took me out to lunch yesterday for an early Christmas gift. She didn’t know what to get me for Christmas and decided to give me a lunch out. We went to one of my families favorite restaurants that is close by. They specialize in burgers but I had their shrimp basket instead. It was delicious and I didn’t eat the rest of the day, I was so full.
I hope you all have a FANTASTIC Friday !

Tom loves date nut bread ... but he's getting a second round of banana nut instead. Cross fingers, the bananas are ripened enough before Christmas!
I almost always order quiche if I see it on a menu, but haven't had any in a long time. Thanks for the recipe; once they quit making "Pour A Quiche" I just put it out of my mind. Good to know I can make this and freeze.
I hope you ALL have a fabulous family Christmas tomorrow. Safe travels!
Yes Sickness sure is inconvenient at family get togethers. Praying that son's family heals soon and can enjoy Christmas day.
Never had date bread, But Sherry's date-nut bars were always a hit at holiday times.
STay warm and enjoy the season..
