I don’t have an outside fire place so will have to toast my marshmallows in the oven. For example, if I want a S’more I’ll but a marshmallow on a graham cracker and bake in the oven until it is golden brown.
I have often sat at a campfire and roasted marshmallows with my family. They all have outdoor fire pits and we all camped for years. Then they provided a fire pit for every camp site.
I love sitting around a fire pit and just talking with people and hope to someday get one of my own. They make portable fire pits to sit on patios.
That would be allowed here if it was safely placed but we aren’t allowed an out door fire pit in the yard.
Today is my day to make a grocery list and go shopping. I make the grocery list for things I don’t have to make the menu for next week.
Monday- Slow Cooker Mushroom Soup with Sherry
Wednesday - Creamy Chicken, Brussels Sprouts and Mushrooms One Pot Pasta
Friday - Eating Well Fish Sticks
Weekend - Rosemary Chicken with Sweet Potatos
On the menu for today is:
Chicken Enchilada Skillet Casserole
Makes 6 servings
2 Tbsp. olive oil
1 cup fresh or frozen corn kernels, I used canned
1/2 cup diced green bell pepper
1/2 cup diced red bell pepper
1/2 cup diced onion
15 oz package baby spinach
2 1/2 cups shredded cooked chicken breast
1 8 oz. pouch red enchilada sauce, such as Frontera
1 1/4 cups prepared fresh salsa
8, 6 inch corn tortillas, cut into 1 inch thick strips
1 1/2 cups shredded Cheddar cheese
1 cup coarsely chopped cherry tomatoes
1/4 cup fresh cilantro
1/4 cup matchstick cut radishes
Preheat oven to 350 degrees. Heat oil in a large oven proof skillet, such as cast iron. Add corn, green and red peppers, and onion. Cook stirring occasionally until charred. Gradually add spinach in batches; cook stirring frequently until wilted.
Stir in chicken, enchilada sauce and salsa until combined. Gently stir in the tortilla strips. Sprinkle with cheese. Transfer to the oven and bake until bubbly, about 15 minutes.
Top the casserole with tomatoes, cilantro and radishes. I also like a dab of sour cream on mine.
I used frozen spinach because I didn’t have enough fresh on hand. But followed the recipe otherwise . It sounds delicious and with the cool days we are having a warm dinner is appreciated.
I got some good news this morning, DS#4, who lives in Florida, sent a message to let me know they are ok. No bad weather their way. They got some much needed rain, but the sun was shining there this morning ! We’ll pray it stays that way.

Headed out to church, yeah, pastor decided to have church mid day... Toasted I think is the only way I enjoyed marshmallows.

I was wondering how your son and family in Florida fared! Thank you for letting us know all's well.
We keep talking about getting a portable fire pit but haven't done anything. (Plus, there's a no-burn mandate in effect right now.)
Perhaps now's the time before the weather turns and they become more expensive.
