Today is National Creamsicle Day which celebrates a frozen treat that is the perfect way to sit back, relax and cool down on a hot August day. The combination of vanilla cream and fruity ice is pure genius!
The classic Creamsicle flavor combination is orange and vanilla, although many other types are available today. You can find this frozen treat in blue rasberry, lime, grape, cherry and blueberry.
Creamsicles are easy to make at home. Mix together fruit juice and vanilla ice cream in a large bowl. Then gradually add milk and continue to mix. Finally pour the mixture into small paper cups and place them in a freezer. Once they are partially frozen, insert popsicle sticks into them and place back in the freezer. When they are frozen solid, peel off the paper cups and enjoy !

Creamsicles are refreshing to eat on a hot day. I usually keep some on hand, but lately, I’ve cut back on sugar and haven’t had one in awhile. Once in a while would problably ok, so maybe today is the day!
Today is my day to cook something new and on the menu is
Chipotle Shredded Beef
1 tsp vegetable oil
1 onion, chopped
1 can diced tomato, undrained
1/4 cup cider vinegar
1 cup chopped chipotle pepper in adobo sauce
plus 2 tsp. sauce
6 garlic cloves.
2 bay leaves
1/2 tsp ground cumin
1/2 tsp. paprika
1/2 tsp. pepper
1/4 tsp ground cinnamon
1 boneless beef chuck roast, 2 1/2 pounds
5 cups brown rice, if desired
Shredded cheddar cheese and sour cream optional.
I will be omitting the peppers as I don’t like things too hot, so I’ll be adding some barbecue sauce, but other wise will follow the recipe. It makes a lot so I’ll be freezing some to have later on.
In a large skillet coated with cooking spray, heat oil over medium high heat. Add onion, cook until tender. Stir in tomatoes, vinegar, sauce, bay leaves and spices. Bring to a boil. Reduce heat, simmer uncovered about 6 minutes until thickened.
Place roast in a slow cooker, add tomato mixture. Cook covered on low 8 hours until meat is tender.
Discard bay leaves. Remove roast, cool slightly. Skim any fat from cooking juices. Shred beef with two forks. Return beef and cooking juices to slow cooker and heat through. Serve with rice if desired, and top with cheese and sour cream.
I’ll be having mine as a sandwich, using a whole wheat bun.

Enjoying a creamsicle is a good way to cool off on a hot day !
I think creamsicles are what we used to call a "push-up" from the ice-cream truck. They even have an alcoholic version, but I've never tried that!
We really enjoy a good pot roast -- altho' due to rising prices we eat more pork and chicken. Nevertheless, this recipe is a nice twist to the ones I usually make. Worth checking out!
