Today is National Ice Cream Sandwich Day which is an ice cream treat that is always delicious. They come in many different varieties. In their traditional form, Ice cream is tucked between to thin layers that resemble chocolate cake. Other varieties include, chipwiches, ice cream between two chocolate chip cookies.
Variations of this delight can also be found in different counties. In Australia, the most sandwiches are called Giant Sandwiches, while Maxibons, are half dipped in chocolate. However, the most exotic might be found in Singapore. Her red bean and yam and honeydew are popular flavors.
To celebrate today, visit your nearest grocery store and buy your favorite. Enjoy!

Even though I don’t eat much ice cream, I like to keep these on hand. Ice cream sandwiches make a quick and easy dessert to have when company comes. I serve them with chocolate syrup drizzled on top.
Today is my day to get out and do my grocery shopping and in order to make my grocery list, I’ve made up a new menu for next week.
Monday - Quacamole Chopped Salad
Wednesday - Creamy Rotisserie Chicken Noodle Casserole
Friday - White Beans and Veggie Salad
Weekend - Baked Lemon Pepper Chicken
On the menu for today is:
Philly Cheesesteak Stuffed Peppers
Makes 4 servings
2 bell peppers, halved lengthwise, seeds removed
1 Tbsp olive oil
1 onion, halved and sliced
1 package mushrooms, thinly sliced
12 oz. round steak, thinly sliced
1 Tbsp. Italian seasoning
1 Tbsp, Worcestershire
4 slices provolone cheese
Preheat oven to 375 degrees. Place pepper halves on a rimmed baking sheet. Bake until tender, but still holding their shape.
Meanwhile heat oil in a skillet over medium heat. Add onion and cook stirring until they are starting to brown. Add steak, and cook 5 minutes make stirring until steak is cooked through. Remove from heat and stir in Worcestershire.
Preheat boiler to high. Divide the filling between pepper halves and top each with a slice of cheese. Broil until cheese is melted and lightly brown.
I used cut up frozen cheese steaks and not the chunks of steak. I had them on hand and they are quick and easy to fix.
Eating philly cheesesteaks this way is healthier for you as you are using a pepper instead of bread to serve them on. They even have cheesesteaks made of chicken if you’d rather have chicken instead of beef.
You can serve these with side of cauliflower rice.
It’s supposed to be a warmer day here with temps in the mid 80’s so it will be a great day to get out and about.

For some reason, I never enjoyed ice cream sanwiches because they made my teeth hurt. Tom does, however, and usually keeps a box of the Eskimo variety in the freezer.
How I love peppers -- usually in soup or even filled with loose meat and done in the slow cooker. Your recipe, however, is ringing my bell. Another addition to my list of things to prepare when the heat settles down. And lemon pepper? My son introduced me to that about 8-9 years ago, and now it's a staple in the cupboard.
The only good thing about summer is ice cream. LOL
